6slicesbacon cooked and crumbled, reserve 2 Tbsp drippings
2Tbspapple cider vinegar or red wine vinegar
1-2tspgarlic salt (adjust amount to taste)OR table salt and 1 tsp granulated garlic

1/2-1tspcrushed red pepper flakes
114 ozsmoked kielbasa sausage1/4 inch slices
2Tbspchopped fresh parsley
Instructions
Preheat oven to 450°F. Spray a large rimmed sheet pan or two pans with cooking spray.
Spread cabbage and onion on pan. Drizzle with oil, bacon drippings, vinegar, salt, pepper, fennel seed and crushed red pepper flakes, toss to coat. (You can use more or less oil to your taste and/or spray with cooking spray).
Place into the oven, and bake roasting for 10 minutes. Stir, then arrange kielbasa slices on top.
Lower oven temp to 425°F and return to oven cooking for 25-35 minutes or until cabbage is lightly charred and tender, stirring halfway through. Broil at the end of cooking to brown further, if desired.
Serve immediately garnished with fresh parsley and crumbled bacon and a dollop of sour cream.
Notes
Sausage - You could also use andouille sausage, chicken sausage, polish sausage or turkey sausage in place of kielbasa. Any smoked sausage that you enjoy will work.
Cabbage - You could use savoy cabbage in place of green cabbage. It's not quite as thick and hearty as green cabbage, so adjust the cooking time as needed.
Butter - If you prefer, you can use butter in place of the bacon drippings.
Seasonings - You could use granulated garlic or garlic powder and table salt instead of garlic salt and add a dusting of onion powder to the mix.
Potatoes - You can add cooked potatoes to the pan, too. Red potatoes, russet potatoes or Yukon gold potatoes would all work. Start with parboiled fork tender cubed potatoes, tossed with a little olive oil. Add to the pan with the kielbasa. If you're keeping this keto, omit the extra carbs.
Apples - You could cut up a Granny Smith apple or two and add it to the cabbage mixture.
Herbs - You could swap out the parsley for chives, dill or cilantro.
Vegetables - You could add shredded or sliced carrots to the cabbage in place of potatoes.
Mustard - You may enjoy serving this dish with a side of grainy mustard, a mustard vinaigrette, Creole mustard or Dijon mustard.
Garlic Cloves - You could add 3 large cloves of minced garlic or use shallot in place of onion.
Lighter Option - Use cooking spray in place of oil, omit bacon and use turkey kielbasa.
