This old-fashioned 7Up Pound Cake is a Southern classic with a tender, buttery crumb and lemon-lime flavor. It's the kind of homemade cake right at home on a Sunday supper table, holiday dessert spread or alongside a cup of coffee when company comes by.

Ingredients
7Up Pound Cake:
3cupscake flour
1tspsalt
1 1/2cupsbuttersoftened
3cupgranulated sugar
5largeeggs
1tsplemon extract
1tspvanilla extract
1/2cup7 Uproom temperature
7Up Glaze:
1cuppowdered sugar
3Tbsp7Uproom temperature
1tsplemon extract
1tspvanilla extract
Instructions
Preheat oven to 325°F. Butter and flour a standard bundt pan. Set aside.
In a medium bowl use a whisk to sift together the flour and salt. Set aside.
In the bowl of a stand mixer fitted with the whisk, whip the softened butter for 2 minutes.
To the bowl, gradually add the granulated sugar. After all has been added whip on high speed for 7 minutes. (This step creates an airy texture.)
Next, on medium speed add the eggs one at a time beating well after each addition. Whip in the lemon extract and vanilla extract. Switch to the beater attachment.
On low speed, gradually add the flour mixture alternately with the 7Up. Mix on low speed until all of the flour has been added and no flour streaks remain. Stop and scrape the sides of the bowl periodically.
Pour the cake batter into the bundt pan and spread evenly. Bounce on the counter to settle and release air bubbles.
Bake in preheated oven for 70-85 minutes until a toothpick inserted into the center comes back clean.
Cool in the pan for 30 minutes then flip and turn out onto a wire rack to cool completely.
Optional 7up Glaze: In a small bowl stir together the powdered sugar, 7up, vanilla extract and lemon extract until smooth. Drizzle over the cake.
Bake Time: This cake can also be baked at 300°F for 90 minutes. Check the cake after 1 hour and cover with aluminum foil to prevent over browning, if needed.
Notes
Flour - You can make this 7up pound cake with cake flour or all purpose flour. Cake flour will give you a more tender crumb.
7up - You could opt to use Sprite in place of 7up. You could also substitute full sugar soda for diet 7up. It won't add to the sweetness but the carbonation will still give lift to the texture of the cake.
Leaveners - You'll note there's no baking powder or baking soda in this recipe. The eggs and 7up work the magic for the leavening.
Optional Topping - You can serve this bundt cake as is simply dusted with powdered sugar or with the optional glaze that features the same lemon lime flavor.
Instant Pudding Mix - If you'd like to bump up the lemon flavor, you can add one 3.4 ounce package of instant lemon pudding mix sifted with the dry ingredients. You could also add 1 tablespoon of fresh lemon zest.
Glaze - To make a simple glaze, mix together powdered sugar with enough 7 Up until it's drizzle consistency adding a splash of lemon extract for a boost of flavor. Once smooth, drizzle it over the cooled cake.
