Crisp broccoli slaw and toasted ramen noodles are tossed in a sweet and tangy dressing for a side dish that’s full of crunch and flavor. It’s a fresh twist on traditional slaw and a mighty fine match for grilled meats, barbecue, or your favorite Asian-inspired dishes.

Ingredients
13 ozpackage Ramen noodles (Any flavor)
112 ozpackage broccoli slaw
1/2cupdry roasted peanutschopped
1/4cupchopped cilantro
4green onionthinly sliced
1/2cupvegetable oil
1/3cupgranulated sugar
1/4cuprice wine vinegar
1Tbspsoy sauce
1tsptoasted sesame oil
1tspgarlic salt
1tspgarlic powder
1/2tspblack pepper
Instructions
Preheat the oven to 350°F. Crush the ramen noodles, discard the flavor packet. Spread in a single layer on a baking sheet and toast for 10-15 minutes until golden. Set aside to cool.
In a medium size mixing bowl, mix together the broccoli slaw, chopped peanuts, chopped cilantro and sliced green onion.
In a separate bowl whisk together the vegetable oil, sugar, rice wine vinegar, soy sauce, toasted sesame oil, garlic salt and garlic powder and black pepper. Whish for 1-2 minutes until the sugar has dissolved.
Pour over the broccoli slaw. Mix well.
Chill for at least 4 hours and toss with the ramen noodles just before serving.
Notes
Toasted Ramen Noodles - It's well worth the small amount of effort it takes to toast the ramen noodles in the oven. It adds to the nutty flavor that complements the other ingredients. Don't skip it.
RiceVinegar - You can use white balsamic vinegar or apple cider vinegar in place of rice wine vinegar.
Peanuts - You could swap out the peanuts using toasted almonds, sunflower seeds, sesame seeds or pepita.
Oil - You can use vegetable oil or canola oil for the dressing.
Make-Ahead Tip - I prefer to make the broccoli slaw several hours in advance and then add the toasted ramen noodles just before placing the slaw into a serving bowl. This will ensure that the ramen noodles will maintain their crunchy texture.
Chill Thoroughly - Allow time for the slaw to chill in the fridge prior to serving. Once you add the peanuts allow ample time for the broccoli slaw to chill.
