Ingredients

  • 1 large loaf Italian bread (1 pound loaf)
  • 6 Tbsp unsalted butter divided use
  • 3 cups shredded sharp colby jack cheese
  • 1 6 oz container garlic and herb Alouette cheese OR Boursin cheese
  • 1/2 cup mayonnaise
  • 1/2-2/3 cup thinly sliced green onions
  • 3 medium garlic cloves minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 2-3 Tbsp grated Parmesan cheese
  • fresh parsley for garnishing (OR additional green onions)

Instructions

  • Preheat the oven to broil. Cut the Italian loaf in half and place side by side on a large baking sheet. Spread each half with 3 Tbsp of softened butter. Place into the oven to lightly toast.
  • In a medium bowl combine the colby jack cheese, Alouette cheese, mayonnaise, green onions, minced garlic, salt, black pepper and paprika. Stir to evenly distribute.
  • Divide the mixture between the two toasted bread halves spreading evenly from edge to edge. Sprinkle each loaf with Parmesan cheese
  • Return the bread to the oven. Broil for 5-7 minutes or until the cheese is golden brown, melty and bubbly.
  • Slice into 1-inch pieces and serve immediately garnished with parsley or additional green onions.

Notes

    • Cheese - You can use any variety or flavor of cheese that you enjoy. Mozzarella cheese, gruyere cheese, pepper jack cheese, sharp cheddar cheese or swiss cheese or any blend of the aforementioned, with work.
    • Fresh Herbs - You can change the flavor profile by adding fresh rosemary, thyme, chives or oregano.
    • Bread - You can use a loaf of french bread or ciabatta in place of Italian bread.
    • Garlic - You can use 1-2 teaspoons of garlic powder or granulated garlic in place of garlic cloves. Adjust the amount to your taste.
    • Mix-Ins - You could add a variety of mix-ins like chopped olives, chopped jalapeno pepper, diced roasted red peppers, crispy bacon, sausage or jumbo lump crab meat.
    • Mayo - While the mayonnaise is not detectable in the flavor. You could use Miracle Whip, in a pinch.
    • How to Serve Cheesy Bread - Pair it with a bowl of warm marinara, a hearty soup, a bowl of pasta or your favorite dipping sauce for the ultimate indulgence.
