You just slice the loaf, slather on a mix of butter, garlic, cheese and seasonings then toss it in the oven until it’s all melty and golden. The edges get perfectly crispy, the middle stays soft, and the cheese pulls? Unreal. It’s the kind of thing that disappears the second you put it on the table. - Bread – You’ll need one of those large soft bread Italian loaves from the grocery store bakery.
- Cheese – A combination of colby jack cheese and soft garlic herb Alouette cheese forms the base of the creamy cheese spread.

- Toast the Bread – Slice the bread through the middle into two even halves. Slather with butter, then pop under the broiler to lightly toast. Since the cheese topping for this bread is broiled, this step is important as it gives the bread a chance to heat all the way through.

Ingredients
- 1 large loaf Italian bread (1 pound loaf)
- 6 Tbsp unsalted butter divided use
- 3 cups shredded sharp colby jack cheese
- 1 6 oz container garlic and herb Alouette cheese OR Boursin cheese
- 1/2 cup mayonnaise
- 1/2-2/3 cup thinly sliced green onions
- 3 medium garlic cloves minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika
- 2-3 Tbsp grated Parmesan cheese
- fresh parsley for garnishing (OR additional green onions)
Instructions
- Preheat the oven to broil. Cut the Italian loaf in half and place side by side on a large baking sheet. Spread each half with 3 Tbsp of softened butter. Place into the oven to lightly toast.
- In a medium bowl combine the colby jack cheese, Alouette cheese, mayonnaise, green onions, minced garlic, salt, black pepper and paprika. Stir to evenly distribute.
- Divide the mixture between the two toasted bread halves spreading evenly from edge to edge. Sprinkle each loaf with Parmesan cheese
- Return the bread to the oven. Broil for 5-7 minutes or until the cheese is golden brown, melty and bubbly.
- Slice into 1-inch pieces and serve immediately garnished with parsley or additional green onions.

I came up with a similar combo, but love your addition of boursin cheese! Folding in toasted pine nuts also adds a fun bit of texture, and I like to sprinkle sesame seeds and poppy seeds over the cheese before baking for a pretty topping.
