1cuproughly chopped pecanstoasted
1 1/4cupsemi-sweet chocolate chips
1/2cupall purpose flour
1/2cupsalted butter meltedcooled to room temperature
1/2cupgranulated sugar
1/2cupbrown sugar
1/4tspsalt
2TbspKentucky bourbon
1tsppure vanilla
3largeeggslightly beaten
Instructions
Preheat the oven to 350°F. Spread pecans in a single layer on a baking sheet. Toast for 6-8 minutes. Set aside to cool slightly.
In a large bowl, stir together pecans, chocolate chips and flour until coated evenly.
In a separate medium bowl, whisk together cooled butter, granulated sugar, brown sugar, salt, bourbon, vanilla and eggs until fully blended. Add to pecans and chocolate chips. Mix well.
Pour the filling evenly into the pie crust. Transfer to the oven and bake for 30 minutes.
After 30 minutes, lay a piece of foil on top. Lower the oven temperature to 325°F. Continue to bake the pie for another 20-30 minutes or until the center of the pie is set when gently shaken.
Cool on a cooling rack for 4 hours. Slice and serve with vanilla ice cream or pipe fresh whipped cream on top of the pie.
Frozen Pie Crust - This pie bakes for around 1 hour so there's no need to thaw a frozen pie crust, just fill and bake!
Chocolate - You can use creamy milk chocolate chips or rich dark chocolate chips in this pecan pie. It really depends on the depth of chocolate flavor that you enjoy. I think semi-sweet works best.
Bourbon - What's the best bourbon to use? A Kentucky bourbon is my top choice for this pecan pie. That said, you can use any bourbon that you enjoy, of course.
Nuts - Pecans are classic but you could use walnuts, instead.
