A Southern-inspired twist on a classic favorite, this loaded baked potato salad combines tender potatoes with creamy dressing, crispy bacon, sharp cheddar, fresh herbs, and all the comforting flavors of a loaded baked potato in every bite. Perfect for cookouts, holidays, and family gatherings.
Place the cubed potatoes in a large pot and cover with cold water. Add 1 tsp salt. Bring to a boil and cook for 15 minutes or until fork tender.
Drain cooked potatoes in a colander and allow to cool for 5 minutes while you make the dressing.
In a large mixing bowl whisk together the mayonnaise, sour cream, buttermilk, Ranch seasoning, lemon pepper and black pepper.
Add the potatoes, bacon and green onion. Toss to coat. (Reserve 2 Tbsp each of bacon and green onion for garnishing)
Chill for about 20-30 minutes then add 1 1/4 cup shredded cheese. Mix well.
Serve warm or chilled garnished with reserved bacon, green onion and shredded cheese.
Notes
Potatoes - You can use red potatoes or yukon golds in place of russets. Each variety has different amounts of starch and therefore will cook differently. Adjust the cooking time to accommodate.
Cheese - You can use medium cheddar cheese, colby jack cheese or spicy pepper jack cheese.
Onion - You can use chives for a milder onion flavor or add minced red onion to amp up the taste.
Mayonnaise - You can use light mayonnaise for the dressing. I've also made this with light sour cream and it does equally as well.
Serve it Warm or Cold - You can serve Loaded Baked Potato Salad warm or chilled garnished with reserved bacon, green onion and shredded cheese.
