Poppy Seed Salad Dressing

Sweet, tangy, and lightly creamy, this homemade poppy seed dressing comes together in minutes with simple pantry ingredients. Perfect for fruit salads, green salads, and more.

Ingredients

  • 1/3 cup apple cider vinegar
  • 1/2 cup granulated sugar
  • 1 medium shallot, finely minced Or 1/4 cup red onion
  • 1 1/2 tsp ground mustard
  • 1 1/2 tsp coarse sea salt
  • 1 1/2 tsp poppy seeds
  • 1 cup vegetable oil

Instructions

  • Combine the apple cider vinegar, sugar, minced shallot, ground mustard and salt in a stand blender.
  • Reserve the poppy seeds and oil.
  • Process and puree for 20-30 seconds until the ingredients are smooth.
  • Remove the lid, lower the speed of the blender and add the poppy seeds.
  • Drizzle in the oil slowly with the blender on medium speed. Continue until the mixture emulsifies and thickens.
  • Transfer to a mason jar or airtight container and chill until serving.

Notes

  • Spice Aisle - Poppy seeds are readily available with the other seasonings on the spice aisle of any local grocery store including places like Target and Walmart. There's no substitute for this recipe.
  • Oil - I don't recommend using olive oil for this dressing it will over power the flavor. A simple canola oil or vegetable oil will work best.
  • Vinegar - You can use white wine vinegar or white balsamic vinegar. 
  • Honey - If you'd like the dressing to be just a tad sweeter, you can add honey to taste.
  • Lemon - I prefer this dressing make with apple cider vinegar. That said, you could add a splash of fresh lemon juice to the mix. Don't go overboard, just a little will do.
  • Uses - Drizzle this dressing over a fresh salad, spinach salad, fruit salad, toss with green beans for a green bean salad, use it to season chicken salad or sandwiches.
  • Cranberry Chicken Salad - I also add it to my Cranberry Chicken Salad filled with dried cranberries and crunchy almonds for tang flavor.
