This Roasted Chili Lime Pork Tenderloin is tender, juicy, and packed with zesty chili-lime flavor. An easy oven-roasted main dish that's perfect for busy weeknights or entertaining.
2 1/2lbpackage pork tenderloin (Usually includes 2 pieces)
2Tbspolive oil
1 1/2Tbsplime juice
1Tbspdark chili powder
1 1/2tspground cumin
1tspseasoned salt
1tsplemon pepper or black pepper
1tspsmoked paprika
1tspgranulated garlic
1tsponion powder
1tspbrown sugar
1/2 tsporegano
Instructions
Drizzle a 12 inch cast iron skillet or similar oven safe skillet, with 4 Tbsp olive oil. Place into the oven and preheat to 450°F.
In a small bowl. mix together oil, lime juice, chili powder, cumin, salt, lemon pepper, paprika, garlic powder, onion powder, brown sugar and oregano until it forms a paste. Rub liberally on all sides of pork.
Carefully remove skillet from oven and swirl to coat bottom and 1 inch up sides of skillet. Place pork in pan. Return to oven and bake for 15 minutes.
Lower oven heat to 400°F. Turn pork and continue to cook another 10 minutes or to an internal temperature of 140-145°F.
Rest tented with foil for 10 minutes, slice and serve.
Notes
Pork - When you buy a package of pork tenderloin, you'll often find two smaller tenderloins inside instead of one large piece. That's because of the natural size of this particular cut of pork. This recipe uses both tenderloins, for a total weight of about 2½ pounds, though the exact size and weight may vary slightly from package to package.
Lime Juice - You could swap out lemon juice for lime juice or replace it with soy sauce for an Asian twist.
Lime Zest - To really amp up the lime flavor, garnish with lime zest at the end of baking.
Adjust the Baking Time as Needed - When roasting a smaller amount of pork, or a different weight of pork tenderloin, the baking times will need to be adjusted according to the thickness of the tenderloin to prevent over cooking or under cooking.
Check the Internal Temp with an Instant-Read Thermometer - When roasting pork, the goal is an internal temperature of 140-145°F when inserted into the thickest part of the tenderloin.
