Ingredients
1lbhot or mild breakfast sausagei.e. Jimmy Dean
2cupsshredded medium or sharp cheddar cheesedivided
4ozchive and onion cream cheesesoftened
2TbspDijon mustard
1Tbspchopped fresh chivesplus additional for garnishing
1tspgarlic salt
24wonton wrappers
Instructions
Preheat the oven to 375°F. Lightly spray a 24 cup mini muffin tin with cooking spray.
Fit one wonton wrapper into each mini muffin cup. Set aside.
Brown sausage in a large skillet over medium-high heat until browned and no pink remains. Drain all excess grease from the pan.
Remove the skillet from the heat. To the skillet add 1 cup shredded cheddar cheese, cream cheese, Dijon mustard, chives and garlic salt to the cooked sausage. Mix sausage until blended and the cream cheese has completely melted.
Using a teaspoon divide the sausage filling evenly between the muffin cups. Top each with the remaining shredded cheddar cheese. Lightly spritz the edges of the wrappers with cooking spray or brush lightly with olive oil.
Bake for 10-12 minutes until golden brown, then garnish with fresh chives and serve.
Notes
Protein - I begin this recipe with spicy breakfast sausage, but if you're a bit spice shy use a mild sausage or sage flavored breakfast sausage. You can also make these sausage cups using turkey sausage, Italian sausage, chorizo or andouille sausage.
Cheese - You can use any flavor of cheese that you enjoy. colby jack cheese, mozzarella cheese, swiss cheese, monterey jack cheese or spicy pepper jack cheese.
Fresh Herbs - You could use parsley in place of chives.
Onion - You could sauté green onions with the sausage and skip the chives.
Peppers - You could add jalapeño pepper, red or green bell peppers to the sausage to change the flavor profile.
