- Dressing:
- 3/4 cup real mayonnaise
- 1 Tbsp fresh lime juice
- 1 Tbsp chopped pickled jalapeno plus 1 Tbsp juice
- 1 Tbsp granulated sugar
- 1 tsp lime zest
- 1 tsp garlic salt
- 1 tsp onion powder
- Slaw:
- 8 cups thinly sliced green cabbage
- 1 cup thinly sliced purple cabbage
- 1 cup julienned carrots
- 1/4 cup chopped fresh cilantro
- 4 medium green onions minced
In a medium size mixing bowl whisk together the mayonnaise, lime juice, pickled jalapenos, sugar, zest, garlic salt and onion powder.
To the bowl add green cabbage, purple cabbage, carrots, cilantro and green onions. Mix well.
Chill for at least 4 hours prior to serving, mixing periodically.
