1cupfinely shredded Parmesan cheese plus additional for garnishing
2-3Tbspchopped Italian parsleydivided use

Instructions
To a large bowl add ground chicken, red bell pepper, green onions, mayonnaise, seasoned salt, lemon pepper, Creole seasoning, granulated garlic and beaten eggs. Stir to fully combine.
Add 1 cup panko breadcrumbs, 1 cup shredded Parmesan cheese and 2 Tbsp parsley. Stir to evenly distribute.
Pour the remaining 1 1/2 cup panko breadcrumbs onto a shallow plate. Using an ice cream scoop divide the chicken mixture. Coat with bread crumbs on all sides, using additional crumbs as needed.
Transfer to a parchment paper lined baking sheet in a single layer. (I start with around 3/4-inch thick patties, then press to 1/2-inch when frying.)
Fry Chicken Patties: Heat a few drizzles of olive oil in a large skillet over medium-high heat.
Fry chicken cakes in batches for 3-4 minutes on each side depending on the thickness. Fry in batches adding more oil, as needed. Remove to a a paper towel lined platter or pan.
Serve hot garnished with parsley, Parmesan and your favorite dipping sauce on the side.
Notes
Protein - You can used ground turkey or ground pork.
Spices - You can use old bay seasoning or rotisseries chicken seasoning in place of creole seasoning.
Salt - You can use sea salt in place of seasoned salt. It will change the flavor slightly as seasoned salt has additional spices included.
Onion - If you don't have green onions on hand, replace them with 1 teaspoon onion powder.
Fresh Herbs - You can use chives, rosemary or tarragon in place of parsley.
Parmesan Cheese - Please note, this recipe uses shredded Parmesan cheese and not the finely grated cheese from a can. That would be far too salty for these chicken patties.
Cheese - You could replace the Parmesan cheese with cheddar cheese, mozzarella cheese, colby jack cheese or pepper jack cheese for spice.
Breadcrumbs - You can use almond flour in place of panko for a lower carb option. Serve these cakes over zucchini noodles as an entree.
Serving Chicken Patties - You can serve these as an entree with your favorite side dishes or salads, on toasted hamburger buns like a burger, sandwiches, sliders or wraps with tomato and lettuce. You can also make them smaller and serve them as an appetizer with Southern Comeback Sauce or tzatziki for dipping.
