Preheat the oven to 350°F. Spray a 13x9-inch baking dish with cooking spray. Set aside.
In a large skillet cook the ground beef, onion and poblano pepper in 2 Tbsp of olive oil. Cook over medium-high heat for 6-8 minutes or just until no pink remains. Drain excess grease from the pan.
To the skillet add the salsa, soup, taco seasoning, chili powder, garlic salt, lemon pepper and cumin. Simmer over medium for 3-4 minutes or just until combined stir periodically to prevent sticking, then remove from the heat.
Assemble: Arrange 1/3 of the crushed Doritos on the bottom of the casserole dish. Cover with half of the taco meat mixture. Sprinkle with 1 cup shredded cheese.
Repeat layers 1/3 Doritos, remaining ground beef and 1 cup shredded cheese.
Top with final 1/3 of Doritos and remaining cup of cheese. Lay a loose piece of foil on top.
Place casserole into the oven. Bake for 25 minutes, then remove the foil. Continue baking for another 10-15 minutes or until the cheese has melted and the top is golden brown.
Serve immediately garnished with diced tomatoes, green onions, sour cream or any of your favorite taco toppings.
