Doritos Casserole

Ingredients

  • 1 9.25 oz bag Nacho Cheese Doritos crushed
  • 2 lbs lean ground beef
  • 1 medium onion diced
  • 1 small poblano pepper or jalapeno pepper seeded and diced
  • 2 Tbsp olive oil
  • 1 24 oz jar chunky salsa use mild, medium or hot
  • 1 10 oz can nacho cheese soup or cheddar cheese soup
  • 1 1.0 oz packet taco seasoning
  • 1 Tbsp dark chili powder
  • 1 1/2 tsp garlic salt
  • 1 tsp lemon pepper
  • 1 tsp ground cumin
  • 3 cups shredded colby jack cheese or cheddar cheese divided use
  • diced Roma tomatoes and green onions for garnishing, sour cream for serving

Instructions

  • Preheat the oven to 350°F. Spray a 13x9-inch baking dish with cooking spray. Set aside.
  • In a large skillet cook the ground beef, onion and poblano pepper in 2 Tbsp of olive oil. Cook over medium-high heat for 6-8 minutes or just until no pink remains. Drain excess grease from the pan.
  • To the skillet add the salsa, soup, taco seasoning, chili powder, garlic salt, lemon pepper and cumin. Simmer over medium for 3-4 minutes or just until combined stir periodically to prevent sticking, then remove from the heat.
  • Assemble: Arrange 1/3 of the crushed Doritos on the bottom of the casserole dish. Cover with half of the taco meat mixture. Sprinkle with 1 cup shredded cheese.
  • Repeat layers 1/3 Doritos, remaining ground beef and 1 cup shredded cheese.
  • Top with final 1/3 of Doritos and remaining cup of cheese. Lay a loose piece of foil on top.
  • Place casserole into the oven. Bake for 25 minutes, then remove the foil. Continue baking for another 10-15 minutes or until the cheese has melted and the top is golden brown.
  • Serve immediately garnished with diced tomatoes, green onions, sour cream or any of your favorite taco toppings.

Notes

  • Protein Substitutions: You can use ground turkey, ground pork or ground chicken in this casserole recipe.
  • Soup: If you prefer, you can use cream of chicken soup, cream of mushroom soup or cream of onion soup in place of nacho cheese soup. Plain cheddar cheese soup will lend a milder flavor to the casserole overall.
  • Salsa: You can use mild salsa, medium salsa or hot salsa depending on your preference. The amount of salsa would stay the same. You can also use diced tomatoes with green chiles (Rotel tomatoes) in place of salsa.
  • Mexican Chicken Casserole: You could also adapt this recipe and turn it into a Mexican chicken casserole with Doritos using shredded rotisserie chicken in place of ground beef.   • Beans: You could add pinto beans or black beans to the meat mixture. Drain and rinse prior to adding them to the beef.
  • Peppers: You can use red or green bell peppers in place of poblano pepper for less spice.
  • Cheese: They sky's the limit with cheese. You could use a shredded Mexican cheese blend for the cheese
