Easy Doritos Casserole Recipe

Easy ground beef recipes are always on our weekly menu. This Doritos Casserole is baked until the cheese is bubbly and the edges are golden brown, resulting in a deliciously satisfying dish that’s perfect for a casual family dinner or a fun gathering.   • Prepare Dish – Preheat the oven to 350°F. Spray a 13×9 inch baking dish with cooking spray. Set aside.
  • Beef – In a large skillet cook the ground beef, onion and poblano pepper in olive oil. Cook over medium high heat until no pink remains. Drain all excess fat from the pan.
  • Salsa and Seasonings – To the skillet add the salsa, soup, taco seasoning, chili powder, garlic salt, lemon pepper and cumin. Simmer over medium just until combined then remove from the heat.
  • Assemble- Arrange 1/3 of the crushed Doritos on the bottom of the dish. Cover with half of the ground beef mixture. Sprinkle with shredded cheese.
  • Repeat layers 1/3 Doritos, remaining ground beef and shredded cheese.
  • Top with final 1/3 of Doritos and last cup of cheese. Lay a loose piece of foil on top.
  • Oven – Bake for 25 minutes then remove the foil. Continue to bake for another 10-15 minutes or until the cheese has melted and the top is golden.
  • Serve immediately garnished with diced tomatoes, green onions, sour cream or any of your favorite taco fixings.

  • Ingredients you’ll need to make homemade layered Doritos Casserole: One bag Nacho Cheese Doritos, lean ground beef, onion, poblano pepper or jalapeno pepper, olive oil, chunky salsa, nacho cheese soup or cheddar cheese soup, taco seasoning, dark chili powder, garlic salt, lemon pepper, ground cumin, shredded colby jack or cheddar cheese. diced Roma tomatoes and green onions for garnishing.
  • Kitchen tools you’ll need: One large 12 inch skillet, sharp knife and cutting board, measuring cups and spoons, cheese grater and 13×9 inch baking dish.
  • When crushing the Doritos, think medium-large pieces and not fine crumbs.
  • If you prefer, you can use cream of chicken soup or cream of onion soup in place of nacho cheese soup. Cheddar cheese soup will lend a milder flavor to the casserole overall.
  • You can use ground turkey, ground pork or ground chicken in this recipe.
  • You can use mild salsa, medium salsa or hot salsa depending on your preference. The amount would stay the same.

  • After baking, the casserole can be topped with fresh ingredients like diced tomatoes, green onions, lettuce, olives, and extra sour cream for a refreshing contrast to the layers of crunchy chips, seasoned hamburger and cheese.

Ingredients

  • 1 9.25 oz bag Nacho Cheese Doritos crushed
  • 2 lbs lean ground beef
  • 1 medium onion diced
  • 1 small poblano pepper or jalapeno pepper seeded and diced
  • 2 Tbsp olive oil
  • 1 24 oz jar chunky salsa use mild, medium or hot
  • 1 10 oz can nacho cheese soup or cheddar cheese soup
  • 1 1.0 oz packet taco seasoning
  • 1 Tbsp dark chili powder
  • 1 1/2 tsp garlic salt
  • 1 tsp lemon pepper
  • 1 tsp ground cumin
  • 3 cups shredded colby jack or cheddar cheese divided use
  • diced Roma tomatoes and green onions for garnishing

Instructions

  • Preheat the oven to 350°F. Spray a 13×9 inch baking dish with cooking spray. Set aside.

  • To the skillet add the salsa, soup, taco seasoning, chili powder, garlic salt, lemon pepper and cumin. Simmer over medium for 3-4 minutes or just until combined then remove from the heat.
  • Assemble: Arrange 1/3 of the crushed Doritos on the bottom of the dish. Cover with half of the taco beef mixture. Sprinkle with 1 cup shredded cheese.
  • Repeat layers 1/3 Doritos, remaining ground beef and 1 cup shredded cheese.
  • Top with final 1/3 of Doritos and last cup of cheese. Lay a loose piece of foil on top.
  • Bake for 25 minutes then remove the foil. Continue to bake for another 10-15 minutes or until the cheese has melted and the top is golden.
  • Serve immediately garnished with diced tomatoes, green onions, sour cream or any of your favorite taco fixings.
