No Bake Banana Pudding Pie

Creamy, cool, and loaded with classic banana pudding flavor, this No Bake Banana Pudding Pie combines vanilla pudding, fresh bananas, vanilla wafers, and whipped topping in a buttery pie crust. Ingredients

  • 2 9 oz prepared graham cracker crusts
  • 1 3.4 oz box instant banana pudding
  • 1 3.4 oz box instant vanilla pudding
  • 4 cups half and half
  • 1 8 oz block Neufchatel cheese, softened
  • 1 tsp pure vanilla extract
  • 4 medium bananas sliced,
  • 1 Tbsp lemon juice
  • 40 whole vanilla wafers divided
  • 4 Tbsp crushed vanilla wafers
  • 12 oz frozen whipped topping, thawed OR 3 cups fresh whipped cream

Instructions

  • In a large mixing bowl, using a stand mixer or hand mixer, whip together both packages pudding mix with half and half until thickened, but still pourable.
  • To the pudding mixture add the softened Neufchatel cheese and 1 tsp vanilla extract. Whip on medium-high speed until completely smooth.
  • In a separate medium bowl, toss the banana slices with lemon juice. Fold bananas into the pudding mixture with 1/3 of the whipped topping. Do this by hand until fully combined.
  • Divide evenly then spoon pudding mixture into the bottom of the pie crust. Use an offset spatula to spread evenly.
  • Line the edge of each pie with whole vanilla wafers using about 20 per pie. Add more if desired.
  • Frost top of the pie with the remaining whipped topping and sprinkle each pie with 2 Tbsp crushed vanilla wafers.
  • Chill covered with plastic wrap or foil, for at least 4 hours to set before slicing and serving. Store leftovers chilled.

Notes

  • Pudding Mix - You can use two packages of vanilla pudding or two packages of banana pudding mix. I highly recommend the combination as demonstrated in the recipe.
  • Cream Cheese - I like the texture of Neufchatel cheese in this fluffy pie. You could also use classic full fat cream cheese.
  • Lemon Juice - Tossing the bananas with lemon juice will help delay oxidation and premature browning of the banana slices. Just place them into a bowl and stir until evenly coated.
  • Adjusting Amounts - I know what you're thinking....what if I only want one pie? You can adapt this recipe to make only one pie, if desired but it can be tricky you may have to play with the liquid amount a bit.
  • Half and Half - You can use whole milk or heavy cream to make the pudding.
  • Crush the Vanilla Wafers - You can crush the vanilla wafers using a rolling pin and a Ziploc bag or pulse them a few times in a food processor. Be vigilant, we're not going for fine crumbs here.

  • Garnish - You might like to sprinkle the top with wh8ite chocolate shavings or semi sweet chocolate shavings.
