Easy Barbecue Chicken Sliders Recipe for Quick Meals
These chicken sandwiches are great as an appetizer or small meal any time of year. My son loves sliders because of the small size, so, often I use these little buns to make burgers or sandwiches for him at meal time. They're easy to assemble and the chicken filling can be made in advance so, you have it ready to assemble in a snap. Ingredients You'll Need to Make Barbecue Chicken Sliders
The barbecue chicken and cole slaw both work best if prepared ahead of time. These sliders are meant to be served straight from the oven, so, a little pregame preparation will allow the sliders to be easily assembled when you're ready for them. They're a great addition to any game day menu and you won't even have to fire up the grill. Unless you want to.

- 8 brioche slider buns
- butter or margarine
- garlic salt
- 2 cups roughly chopped roasted chicken, warm
- 1 cup barbecue sauce [your favorite]
- 4 slices Colby-Jack cheese, sliced in half
- 2 cups prepared cole slaw
- 8 dill pickle slices
- party toothpicks
Directions:
- Preheat the oven to broil and move the rack to the highest position. Line a baking sheet with aluminum foil or parchment.
- Lightly butter each side of the slider buns. Sprinkle lightly with garlic salt.
- Place the bottom only on the baking sheet, and place under the broiler to toast.
- In a small mixing bowl, pour one cup of warm barbecue sauce over the warmed roasted chicken. Mix together until the sauce has evenly coated the chicken, and then set the bowl aside.
- After the bottom buns have toasted, remove from the oven, and cover each with about ¼ cup of barbecue chicken.
- Place one half slice of cheese over the barbecue chicken. Place the top buns on the baking sheet to the side.
- Return the pan to the oven, and broil until the cheese melts and the tops are toasted. Remove the sliders from the oven.
- To assemble: place a heaping tablespoon of coleslaw on top of the cheese then replace the top piece. Skewer each slider with a toothpick and garnish with a dill pickle slice. Serve immediately. Yield: 8 sliders
