Country Ham and Cheese Biscuit Bites
These Country Ham and Cheese Biscuit Bites are certain to become a family favorite. They turn biscuits into an appetizer for casual gatherings or a small bite to add to the brunch menu.

What is Country Ham?
Country ham is a type of dried, aged and salt cured ham that can be aged anytime from 6 months up to one year. It’s salty by nature, and it has different texture and flavor than picnic ham. You can find it in vacuum packed slices in the meat department of most grocery stores. It’s shelf stable and isn’t refrigerated.
Ingredients to Make Country Ham and Cheese Biscuit Bites Recipe
White Lily Flour is a consummate Southern brand that most biscuit makers use in the South. That being said, you can use your favorite brand of self-rising flour to make this recipe. Otherwise, you really won’t need special equipment to make these biscuit bites. Ingredients to make easy Country Ham and Cheese Biscuit Bites: (Scroll down for the full printable recipe card.)
- Flour – Self rising flour already has leavening agents added. This forms the base of the biscuit dough.
- Ham – One cup chopped country ham.
- Cheese – Two cups shredded sharp cheddar cheese
- Seasonings – Granulated garlic, ground mustard, onion powder and cayenne pepper for a hint of spice.
- Frozen Butter – Unsalted butter grated on a box grater. You’ll also need melted butter for brushing the tops.
- Milk – Whole buttermilk (well shaken) or lowfat buttermilk.
- Herbs – Fresh chives for a mild onion flavor both in the dough and for garnishing.
- Serving – Sweet hot mustard or maple syrup for serving.

How to Make the Best Country Ham and Cheese Biscuit Bites Recipe
- Heat Oven and Prepare Pans: Preheat oven to 400°F. Line 2 large baking sheets with parchment paper. Set aside.
- Dry Ingredients: In a medium size mixing bowl, use a whisk to sift together flour, garlic, mustard, onion powder and cayenne.
- Add Butter: Add grated butter, stir until evenly distributed in the flour mixture.
- Wet Ingredient: To the bowl add buttermilk, mix well.
- Fold in Ham, Cheese and Chives: Once dough is formed, add cheese, ham and chives. Use a nonstick spatula to gently mix through the dough until fully combined.
- Divide the Dough: Drop mounds of dough using a tablespoon onto the prepared pan. Brush tops with melted butter.
- Oven: Bake per the cook time in the recipe until lightly golden brown.
- Serve: Brush again with melted butter and serve with sweet hot mustard or maple syrup, if desired.
Tips for Making Country Ham and Cheese Biscuit Bites
- Kitchen Tools You’ll Need: A large sheet pan, mixing bowls. measuring cups and teaspoons, a cheese grater, a whisk to sift together the dry ingredients, a large silicone spatula to mix together and a pastry brush and two tablespoons to drop the biscuit dough onto the pan.
- Use the Proper Flour: I use self rising flour in this recipe which already includes leavening agents. You can adapt using all purpose flour, but will need to add the appropriate amount of leavening. See the Cook’s note in the recipe template for how to adapt.
- Dipping Sauces to Serve with Biscuit Bites: These biscuit bites are fabulous on their own. That said, I love serving them with a sauce for dipping. in this instance, I recommend serving with honey mustard, sweet hot mustard, hot honey or plain ole yellow mustard on the side.
- Use Country Ham not Baked Ham: Country ham is salt cured and therefore, salty by nature. It’s also fully cooked and often found in the meat department vacuum sealed in small portions perfect for the amount you’ll need for this recipe.
- How to Serve Country Ham Biscuit Bites: This recipe can be served as an appetizer, for game day snacks for breakfast or brunch.

Recipe Variations
- Cheese: Sharp cheddar cheese is my go-to for this recipe as it can hold up to the bold flavor of country ham. You could adapt using another flavor of cheese such as pepper jack cheese, gruyere cheese or mild cheddar cheese.
- Herbs: You could use chopped rosemary or thyme in place of chives.
- Green Onions: Finely chopped green onion could be used for a slightly strong onion flavor.
- Homemade Self Rising Flour: To the same amount of all purpose flour, add 1 tablespoon baking powder, 1/2 teaspoon salt and 1/2 teaspoon baking soda.
Storage and Leftovers
- Leftovers: Store leftover biscuit bites in an airtight container or wrapped in aluminum foil chilled in the refrigerator for up to 3 days.
- Reheating: Reheat on a sheet pan in a single layer in a preheated 350°F oven for a few minutes to crisp and heat through.
- Freezer: You can freeze the biscuit bites and bake from frozen adding a few minutes to the baking time. Freeze them for up to 2 months.

I don’t think I’ve ever seen country ham packaged as being “Fully cooked” already.
It’s typically sold in vacuum packed slices. Perhaps you’ve never specifically looked for it, and of course availability could vary depending on what’s sold in your market. If you can’t find it, those thin country ham slices will cook in a pan in minutes. Easy to cook, cool and chop.
Here they’re called ham steaks, and yes, vacuum packed. I use them to make scalloped potatoes and ham.
Ham steaks and country ham aren’t the same as I believe you’re describing. You could make this with a regular baked ham steak of course, if you prefer.
