Fudge can sometimes be intimidating to make for some cooks. I think it’s the idea that you need to cook it at a specific temperature and use a candy thermometer. I realized many years ago that using a thermometer actually helps the process and takes the guessing out of the preparation. That said, the mention of using a candy thermometer doesn’t appeal to some, and that’s when a recipe like this microwave fudge is the perfect alternative. It takes simple ingredients to make ideal for making at Christmas or anytime of year. Ingredients you’ll need to make quick and easy Microwave Fudge with nuts:
- Nuts – This fudge is totally customizable. You can use one cup of chopped walnuts, pecans or almonds, toasted
- Chocolate Chips – Two cups semi-sweet chocolate chips. I used Ghiradelli as I find it melts easily and smoothly.
- Butter – Six tablespoons or 3/4 cup salted butter for the fudge plus additional for greasing the aluminum foil.
- Liquid – Whole milk works to make the fudge creamy and smooth.
- Flavorings – One teaspoon vanilla extract.
- Confectioners Sugar – It wouldn’t be fudge without copious amounts of sugar. Powdered sugar works best and isn’t grainy once combined with the other ingredients.

- Toast Nuts – Spread in a single layer on a sheet pan. Roast in a preheated 350°F oven lightly golden. Set aside to cool.
- Prepare Pan – Line a square 8×8-inch or 9×9-inch baking pan with heavy duty aluminum foil, leaving an overhang. Butter the bottom and sides.
- Melt Chocolate Chips – Add semi-sweet chocolate chips, butter and milk to a large microwave safe bowl. Cook per the recipe until completely smooth. (Made in a 1000 watt microwave)
- Vanilla and Confectioners’ Sugar – Once melted, add vanilla and powdered sugar. Beat with a hand mixer on medium speed until smooth.
- Fold in Nuts – Stir nuts into the chocolate mixture, mix well.
- Pour into Prepared Pan -Spread fudge mixture into pan and sprinkle with the remaining nuts.
- Refrigerator – Chill to set. Lift from the pan using the foil handles then use a sharp knife to cut into even pieces and enjoy.
Tips for Making Chocolate Fudge
- Kitchen Tools: You’ll need a large microwave-safe bowl, mixer, measuring set, a nonstick rubber spatula, a sheet pan for toasting the nuts, aluminum foil and a 9×9-inch square pan or baking dish.
- Check the Wattage of Your Microwave: This recipe was made in a 1000-watt microwave. You can make it using any wattage of microwave but you will need to make adjustments. Depending on a higher or lower wattage, simply adjust the time accordingly. Keep in mind, the main purpose is to melt the chocolate, butter and milk together until it’s completely smooth not to bring it to a boil like candy.
- Make a Mold Using Foil to Fit the Pan: To line the pan with foil, begin by flipping the pan over. Press the foil over the bottom to form the shape, then flip it back upright and fit the foil into the pan.
- Have Ingredients Assembled Before You Begin: Fudge sets-up fairly quickly. It’s best to measure the powdered sugar and other ingredients beforehand and have all of your supplies ready before you begin, so that you can work quickly.
- Use Quality Chocolate: I highly recommend using a good chocolate for this fudge that will melt smoothly. I used Ghiradelli brand and it melts perfectly smooth for this or any recipe that uses chocolate chips.
- Nuts: You can use any variety of nuts in this fudge to suit your personal taste. You can also omit nuts should you choose to.

Fudge Substitutions and Variations
- Substitutions: You can use dark chocolate chips or milk chocolate chips in this fudge. You could add one teaspoon peppermint extract for a chocolate mint flavor. Use peanut butter chips instead of chocolate chips.
- Variations: You can use chopped walnuts, pecans or almonds in this chocolate fudge recipe. You could also sprinkle the top with sea salt for a sweet and salty treat. Stir in 1/2 cup flaked coconut for chocolate coconut fudge.
Troubleshooting
- Why doesn’t my fudge harden? This recipe won’t have that issue it’s foolproof. That said, recipes that require a candy thermometer have to be cooked to a specific temperature to set properly. Always follow the recipe.
- That being said, if your microwave fudge didn’t set, you can try re-melting it and adding more powdered sugar to help it thicken. Also, make sure to chill it for a longer period of time to allow it to set properly.
Storage and Leftovers
- Storage and Leftovers: This Microwave Fudge can be stored in an airtight container at room temperature or chilled in the fridge for up to one week, possibly even a bit longer. Chilling will lengthen the shelf life.
- Freezer Storage: You can freeze fudge in a freezer-safe container for up to 3 months. Separate layers with parchment paper or wax paper. Thaw in the fridge.

Instructions
- Nuts: Spread in a single layer on a sheet pan. Roast in a preheated 350°F oven for 6-8 minutes or until toasted and lightly golden. Set aside to cool.
- Line an 8×8-inch or 9×9-inch metal baking pan or baking dish with heavy duty aluminum foil, leaving an overhang. Butter bottom and sides.
- Melt Chocolate: Add chocolate chips, butter and milk to a large microwave-safe bowl. Cook for 3 minutes, stopping each minute, to stir. After 3 minutes, add time if needed, in 30 second intervals repeating the process stirring until completely smooth. (Made in a 1000 watt microwave)
- Once melted, add vanilla and powdered sugar. Use an electric mixer on medium speed to beat until smooth. Stop to scrape the side of the bowl, as needed.
- By hand, quickly stir in 1/2 cup toasted nuts into the fudge mixture, mix well. Spread chocolate fudge in pan, top with remaining nuts, pressing gently into the top.
- Chill for at least 2 hours or until set. Lift from the pan using aluminum foil. Use a sharp knife to cut into 36 even pieces.
- Store fudge chilled or at room temperature in an airtight container.
