Is flounder a good eating fish? Yes, flounder is a great eating fish for home cooks! It has a mild flavor and delicate texture that makes it a favorite for seafood lovers. While Southerners are famous for their fried chicken, fried catfish, and hush puppies, we don’t fry every day. At our house, fried food is more of a special treat.

This great recipe for baked flounder is my go-to “faux fried” version, oven-baked with a crispy breadcrumb coating that delivers all the flavor and crunch without the mess of frying. The same technique works beautifully for other mild white fish like sole or cod. In this recipe, thin flounder fillets are drizzled with butter and baked to golden perfection in no time.

  • Fish Fillets – Flounder is the fish of choice for this recipe and you can easily adapt the ingredient amounts from the original yield to make the amount of servings that you need. This recipe is designed for 6 large skinless flounder fillets that were around 2 pounds total weight.
  • Oil – Use vegetable oil or olive oil to add moisture to the fish.

How to Make the Best Baked Flounder Recipe

  • Heat Oven and Prep the Pan – Preheat oven to 425 degrees f. Brush a large baking sheet with oil. Season flounder lightly with salt and black pepper.
  • Eggs – Beat eggs in a shallow bowl.
  • Breadcrumbs – In a separate bowl whisk together Parmesan, bread crumbs, garlic, salt and lemon pepper.
  • Dredge Flounder – Dip fish in egg then dredge fish in bread crumb mixture, pressing on all sides to coat.
  • Transfer to Pan – Arrange on pan and sprinkle any leftover crumbs on top. Drizzle with melted butter mixture.
  • Oven – Bake in preheated oven per the cook time in the recipe recipe until lightly golden brown and fish flakes easily with a fork.
  • Serve – Serve immediately with lemon wedges garnished with fresh parsley.
  • Tartar Sauce – In a medium size bowl whisk together mayonnaise, sweet pickle relish, minced onion, lemon juice, fresh dill, with seasonings, then chill in the fridge until serving.

Storage and Leftovers

  • Leftovers – Flounder is best baked and served fresh from the oven. Should you have any leftovers, you can store it in an airtight container or wrapped in aluminum foil chilled in the refrigerator for up to 2 days.
  • Reheating – Reheat gently in an oiled skillet on the stovetop or in a 375°F oven for a few minutes or just until heated through.
  • Freezer – You can freeze leftovers for up to 1 month. Reheat from frozen in a 375°F oven or in an air fryer.

Ingredients

  • 6 large flounder fillets (around 2 lbs) (skinless)
  • 2 Tbsp vegetable or olive oil
  • 1/2 cup finely grated Parmesan cheese (not shredded)
  • 1/2 cup panko breadcrumbs
  • 1 tsp salt
  • 1 tsp lemon pepper
  • 3 cloves garlic minced
  • 2 large eggs, beaten
  • 2 Tbsp butter melted
  • lemon wedges and chopped fresh parsley for serving

Instructions

  • Preheat oven to 425°. Brush a large baking sheet with 2 tablespoons vegetable or olive oil. Season flounder lightly with salt and pepper.
  • In a shallow bowl, place beaten eggs. In a separate bowl whisk together Parmesan, bread crumbs, garlic, salt and lemon pepper. Dip fish in egg then dredge fish in bread crumb mixture, pressing on all sides to coat. Arrange on pan without touching. Sprinkle any leftover crumbs on top. Pour melted butter evenly over the tops.
  • Bake in the preheated oven until lightly golden brown and the fish flakes easily with a fork, around 18-20 minutes.
  • Serve with lemon wedges for squeezing on top and garnished with fresh parsley.
  • Tartar Sauce: In a medium size bowl whisk together 1 cup mayonnaise, 1/2 cup sweet pickle relish OR diced dill pickles, 2 Tbsp minced onion, 1 Tbsp lemon juice, 1 Tbsp chopped fresh dill, 1 tsp granulated sugar, 1 tsp salt, 1/2 tsp granulated garlic and 1/4-1/2 teaspoon lemon pepper or black pepper until fully combined. Chill in the fridge for at least 4 hours or overnight before serving. (This can be done up to one day in advance)
  • How to Make Air Fryer Flounder:
    Spray the basket or rack of an air fryer with cooking spray.
    After breading the flounder, spray it generously on all sides with an oil mister.
    Arrange flounder in air fryer allowing space between each piece, don't crowd the basket. (You may need to fry in batches, depending on the size of the fish)
    Fry for 5 minutes at 400°F. Flip, and spray again with oil.
    Continue to cook to another 5 minutes or until lightly golden brown and the fish flakes easily with a fork. Serve and enjoy.
  • Stovetop Fried Flounder: Flounder can also be fried in a skillet on the stovetop.
    Cook flounder fillets in a large skillet coated with oil or melted butter over medium heat.
    Fry for 2-3 minutes per side or until it flakes easily with a fork.

  4. Can you use cod or another fish if you are unable to get flounder? I am going to have to try this. My family really likes fish and I am trying to find something other that fried or the pre-cooked frozen kind.
