Bangers and Mash

This homemade Bangers and Mash recipe is comfort food personified. It’s a traditional pub dish served in England with its original roots traced back to Ireland. It combines sausages or “bangers” with mashed potatoes otherwise known as the “mash”. It’s a hearty and comforting meal served smothered with a rich onion gravy.

Easy Bangers and Mash Recipe

Bangers and mash is a classic dish that your family is certain to love! I recommend serving it with a side of sweet petite peas for color and texture to complete the meal. How to make simple Bangers and Mash: (Scroll down for full printable recipe.)

  • Sausages – In a large 12 inch skillet heat oil over medium-high heat. To the pan add sausages and cook turning until browned on all sides and cooked through. Around 6-8 minutes. Remove from the pan.
  • Onion- Add butter to the skillet, lower the heat to medium. Add the onion to the pan saute until softened and beginning to brown scraping any brown bits from the bottom of the skillet. Add the garlic, cooking for 1 minute longer or until fragrant.
  • Gravy – Add the flour to the onions stirring until the liquid is absorbed. Cook bubbling gently while stirring constantly for 1-2 minutes.
  • Beef Stock – Whisk in the beef stock, Kitchen bouquet, worcestershire sauce, salt and black pepper. Cook over medium heat until thickened, adding more stock to thin, if needed. (This isn’t a thick gravy, it will thicken more after it cools.) Add the fresh thyme, mix well.
  • Serve sausages over mashed potatoes drizzled with onion gravy and a side of green peas.

How to Make the BEST Bangers and Mash

  • Ingredients you’ll need to make homemade Bangers and Mash : 8 large pork sausages, prepared mashed potatoes, olive oil, large onion, garlic, all purpose flour, butter, salt, black pepper, fresh thyme, flat leaf parsley, 3 cups beef stock plus additional as needed, Kitchen Bouquet Browning sauce, worcestershire sauce and steamed petite peas for serving.
  • Kitchen tools you’ll need: Large 12 inch skillet, tongs, sharp knife and cutting board, whisk, measuring cups and spoons.
  • Sausages are the star of this classic dish. Choose quality sausages. Opt for high-quality pork sausages with good flavor. Pork bangers are traditional but you could experiment with beef sausage or even turkey or chicken sausages to lower the calories. You may also opt to use a Cumberland sausage that’s sold by length in many speciality butcher shops.
  • When making the mashed potatoes, use my recipe for Easy Mashed Potatoes. Helpful Tips for making mashed potatoes:
    • Cut the potatoes into even-sized cubes to ensure they cook uniformly.
    • Boil the potatoes until tender, then drain well and mash them.
    • For creamy mashed potatoes add warm heavy cream or milk, sweet cream butter, salt and black pepper, if desired. I whip them with a hand mixer but you could use a ricer or potato masher for a smooth texture.
  • Best Caramelized Onion Gravy:
    • Take your time when caramelizing the onions. Slow cooking brings out their natural sweetness and depth of flavor.
    • Using a combination of butter and oil to caramelize the onions will prevent the milk solids in the butter from burning.
    • To form the gravy, add beef stock, Worcestershire sauce, Kitchen Bouquet browning sauce and seasonings to the skillet scraping any brown bits from cooking the sausages to create the rich onion gravy.
  • How do you serve Bangers and Mash?
    • Plate the sausages on a bed of mashed potatoes. Don’t be skimpy the mashed potatoes, are a crucial part of this dish!
    • Pour the onion gravy over the sausages and potatoes.
    • Garnish with fresh herbs. You can use fresh parsley or snipped chives or more thyme.
  • Store leftover Bangers and Mash with the onion gravy in separate containers chilled in the refrigerator. Gently reheat in the microwave and assemble prior to serving.
