Easy Barbecue Beef Tater Tot Casserole Recipe
Casseroles are always a win in my kitchen. They’re hearty, filling, and just the kind of family-friendly meals that get everybody gathered around the table. Whether it’s a beef and noodle bake, a Southwest casserole topped with a sweet cornbread crust, or skillet cowboy rice, I love how a few everyday ingredients can come together to make a satisfying supper. They’re also a frugal cook’s friend, often stretching ingredients into a meal with enough left over for round two, depending on the appetites around your table, of course!
This Barbecue Beef Tater Tot Casserole is another one to keep in your weeknight rotation. The savory beef filling, tangy barbecue sauce, melted cheese, and crispy tater tots make it a comforting meal that’s easy to serve on busy weeknights, casual Sunday suppers, or whenever you’re feeding a hungry crowd. The corn adds a little sweetness and color, but it’s completely optional, so feel free to leave it out if your family prefers. Serve it with a simple green salad or garlic bread, and supper is taken care of!

Recipe Variations, Tips and Substitutions
- Tater Tots – For this dish the tater tots I used are round called crispy crowns. I like the different shape, but you can certainly use regular classic shaped tater tots. We all tend to eat with our eyes first and something as simple as changing the shape really appeals to kids of all ages.
- Protein – You could adapt this recipe using ground pork, ground turkey or ground chicken.
- Cheese – You can use shredded pepper jack cheese, colby jack cheese or monterey jack cheese.
- Best BBQ Sauce to Use – You can use your favorite flavor or brand, of barbecue sauce, and make the filling to your family’s taste. My family enjoys a bit of heat, so I used a honey-chipotle barbecue sauce. Use a brand and flavor of barbecue sauce that you enjoy and you’ll be good to go. Thick works best.
- Garlic Salt – If this isn’t something you keep on hand, you can use 1 teaspoon garlic powder or granulated garlic and plain salt.
Storage and Leftovers
- Make-Ahead Tip – To save time, the filling can be made one day in advance, poured into the baking dish then covered with plastic wrap and chilled. Tater tots need to remain frozen until baked, so just arrange them on top just before baking.
- Room Temperature – When chilling prior to baking, it’s a good idea to allow 15-20 minutes on the counter to allow it time to warm to room temperature.
- Leftovers – Store baked Barbecue Beef Tater Tot Casserole chilled in the refrigerator for up to 3 days.
- Reheating – Reheat in a 350°F oven, in an air fryer or in single servings in the microwave.
- Freezer – You can freeze leftovers for up to 2 months. Thaw in the fridge and reheat to crisp the tater tots just before serving.
