Reuben Egg Rolls
These egg rolls are stuffed with thinly sliced corned beef, sauerkraut and Swiss cheese. Reuben sandwiches are usually served on rye bread so caraway seeds sprinkled into the mix brings the flavor to life. These are a spectacular option anytime handheld eats are being served whether it’s the holiday season, St Patrick’s Day or game day snacking.
How to Make the Best Reuben Egg Rolls Recipe
- Ingredients you’ll need to make homemade Reuben Egg Rolls: Egg roll wrappers, thinly sliced deli corned beef, sauerkraut,sliced Swiss cheese, caraway seeds, prepared Thousand Island dressing, vegetable or canola oil for frying and fresh chives for garnishing.
- Kitchen tools you’ll need: Sheet pan to hold the egg rolls once assembled, measuring cup and spoons, fry thermometer, sharp knife and cutting board, Dutch oven or deep pot for frying, stainless steel spider or tongs to remove from the oil, small bowl and pastry brush.
- You can use any brand of Thousand Island dressing that you enjoy for dipping the egg rolls after frying.
- Caraway seeds feature hints of liquorice and a lemony-citrus flavor that gives rye bread its distinctive flavor. since Reuben’s are often made using rye, caraway seeds will bring that to the flavor of these egg rolls overall. If you prefer, they can be omitted but are quite delicious and helpful in rounding out the flavor profile. Rest assured, the egg rolls will still be delicious, if omitted.
- You can fully assemble the egg rolls a few hours in advance, place into an airtight container and chill in the refrigerator until frying. If stacking, place wax paper between to prevent sticking.
- Swiss cheese is the glue in these egg rolls and I find that sliced cheese works best and makes them easier to roll. Shredded cheese could work but you’ll lose more in the process.
- If you have a deep fryer by all means use it! You could also adapt this recipe for an air fryer. See the Cook’s note for instructions.
- Store cooked egg rolls chilled in the refrigerator for up to 3 days. Reheat in an air fryer or in a 375°F oven for 5-8 minutes to crisp and heated through.
How to You Cook Egg Rolls in an Air Fryer
To Air Fry these egg rolls:
- Prepare the egg rolls per the recipe. Spray the basket of an air fryer with cooking spray.
- Preheat the air fryer to 360°F. (The need to preheat varies between different styles and brands of air fryers. Your air fryer may not require preheating.)
- Brush the assembled egg rolls with vegetable oil on all sides. Arrange in the air fryer 3 or 4 at a time leaving room for air to circulate.
- Cook for 5 minutes, then flip. Brush with additional oil.
- Cook for another 5 minutes or until lightly golden.
- Remove and keep warm, if frying in batches.
- Serve immediately with additional Thousand Island dressing for dipping.

Reuben Egg Rolls

Ingredients
- 12 egg roll wrappers
- 24 slices swiss cheese
- 1 lb thinly sliced deli corned beef divided into 12 equal portions
- 1 cup thousand island dressing plus additional for serving
- 2 cups sauerkraut well drained, squeeze dry
- 1-2 Tbsp caraway seeds optional
- canola or vegetable oil for frying
- chopped fresh chives for garnishing
Instructions
- Place an egg roll wrapper on a flat surface with one of the points facing towards you in a diamond shape. Place one slice of Swiss cheese in the middle of the wrapper, leaving a 1-inch boarder around the sides.
- Top with 1 portion corned beef. Spread ¼ cup of sauerkraut over the corned beef and top it with about 2 Tbsp Thousand Island dressing. Sprinkle with caraway seeds, if using. Top with another slice of Swiss cheese.
- Brush edges of egg roll wrapper with water. Fold the bottom corner of the wrapper pointing toward you tightly up over the filling pushing out any air pockets. Fold the left corner in toward the center over the filling and then the right corner over the center so it looks like an envelope. Tightly roll towards the top open corner to seal the egg roll. Brush with additional water if needed, to seal the edges. Repeat assembling each egg roll.
- In a Dutch oven or deep pot heat 3 inches oil to 350°F. Fry egg rolls in batches, turning for even browning as needed, for 2-3 minutes or until golden and heated through.
- Serve immediately garnished with fresh chives and additional Thousand Island dressing for dipping.
