Instructions
- Preheat oven to 425°F. Spray a large sheet pan with cooking spray. Spread waffle fries on pan. Bake for 22-25 minutes until golden.
- Meanwhile, on the stovetop over medium high heat melt butter in a 1-2 quart heavy bottomed saucepan. Add flour and garlic salt. Cook, stirring occasionally, until fragrant and smooth, about 1 minute.
- Whisk in milk and beer until combined. Reduce the heat to low and simmer, stirring occasionally, until the sauce slightly thickens, about 5-8 minutes. Remove from the heat and whisk in 1 cup shredded Swiss cheese and Dijon mustard until smooth.
