Cajun 15 Bean Soup
This Cajun 15 Bean Soup is seasoned with turkey and andouille sausage. It’s a scrumptious way to use leftover turkey from Thanksgiving or any time of year using rotisserie chicken. This Cajun 15 Bean Soup Recipe is guaranteed to warm you up on a cold day. It’s a hearty soup with a 15-bean mix that includes a variety of beans such as pinto beans, navy beans, white kidney beans, baby lima beans and more bean varieties. It’s both inexpensive and filling. - Prepare Bean Soup Mix – Remove the seasoning pack from beans. Set aside. Rinse beans in a colander removing any debris.
- Soak Beans – Pour into a large pot and cover with 8 cups cold water. Soak on the counter for 8 hours or overnight.
- Prepare – Drain water from beans. Add 8 cups chicken broth, bay leaves and thyme. Bring to a boil.
- Cook – Cover and lower the heat to simmer. Cook covered for 2 hours stirring occasionally.
- Cook Andouille Sausage – Meanwhile, drizzle a large skillet with olive oil. Over medium-high heat brown the andouille sausage. Push to the side or remove to a platter.
- Veggies and Seasonings – Add the pepper, onion, celery, garlic cloves, garlic salt, lemon pepper, black pepper and cumin to the skillet. Sauté until softened and beginning to brown.
- Combine – After the beans have cooked for 2 hours add the Cajun seasoning packet, sausage and sauteed vegetables, tomatoes and turkey. Stir well.
- Finish Cooking – Cover and continue to cook for 30 minutes OR until the beans are tender. When done add parsley then taste and adjust salt to your taste, if needed. Mix well
- Serve with a scoop of rice and hot sauce on the side, if desired.

- Ingredients you’ll need to make stove top Cajun 15 Bean Soup: One 20 oz package HamBeens® Cajun 15 BEAN SOUP, 8 cups water for soaking, 8 cups chicken broth, bay leaves, fresh thyme, smoked andouille sausage, green bell pepper, onion, celery, garlic salt, lemon pepper, black pepper, ground cumin, diced tomatoes with green chiles, roughly chopped turkey, Italian parsley and cooked rice and hot sauce for serving.

I have everything for this soup except the turkey. I do have some leftover cooked rice, can I use that instead? Thank you!
You can omit the turkey this soup will still be delicious. The rice would be a tasty addition, sure!
Made for husband and his co-workers very much meat eaters added sausage, chicken and ham you can add more broth if you want more juice, big hit!! Thinking maybe shrimp next time.

Hi Sue, I’m glad you found the 15 bean soup! You could improvise using your favorite Cajun seasoning, there are a couple of well known brands widely available. Depending on how much heat you like and which brand, I’d start with one Tbsp then taste and add more to your liking.
