Subs, wings, pizza, veggies and dip, you know, quick foods. I didn't have wings on hand so, I chose the combined flavors of pizza and wings in the form of a buffalo chicken pizza, solving my dilemma. I thought I'd pass along to you my take on this popular spicy pizza.
Ingredients you'll need:
1 [13.8 oz] can refrigerated pizza dough or 1 lb homemade dough
½ cup buffalo wing sauce. divided
1 ½ cups shredded Monterey-Jack cheese, divided
1 ½ cups chopped roasted chicken
⅓ cup red pepper, thinly sliced
⅓ cup purple onion, thinly sliced
garlic salt and black pepper to taste
¼ cup bleu cheese crumbles
⅓ cup prepared chunky bleu cheese dressing, plus add'l for dipping
1 chopped green onion
grated Parmesan cheese
Directions:
Preheat the oven to 425°F. Line a baking sheet with parchment paper. Unroll the pizza crust onto the parchment. Gently stretch the dough into an 8 x 13 inch rectangle. [Alternatively, shape into a 12 inch round]
Thinly slice the veggies and chop the chicken into bite size chunks. Spread ¼ cup of hot sauce evenly on the pizza crust and toss the chicken chunks with the other ¼ cup of sauce.
Sprinkle half of the shredded cheese over the crust, then layer the chicken and vegetables. Sprinkle with the blue cheese crumbles and season with a little garlic salt and pepper to taste. Drizzle ⅓ cup of blue cheese dressing over the chicken and vegetables and finish with a few chopped green onions.
Sprinkle the top with the remaining shredded cheese and a little grated Parmesan, if you like. Bake for 15-17 minutes until the crust is golden. Serve hot with fresh vegetables and blue cheese dressing for dipping. Yield: 8 pieces.
Cook's note:
Ranch can be used in place of bleu cheese dressing, if desired.
