Ingredients to Make Sheet Pan Cabbage and Kielbasa Recipe
I love finding ways to make recipes that we love using different techniques depending on the amount of prep time that I have on any given day. While I certainly love making fried cabbage with bacon on the stovetop, some days it’s nice to toss it into the oven on a sheet pan and move on with other things. Those are the days I utilize this oven braising technique. Sheet Pan meals are designed to be easy, and this cabbage dinner is no different. Prep the ingredients in advance, then toss them on the pan when you’re ready to bake.

- Cabbage – Green cabbage forms the base of the dish.
- Sausage – Smoked kielbasa adds protein and a flavor.

- Onion – Chopped sweet onion or yellow onion for a stronger onion flavor. You could also use shallot or a sprinkle of green onions for a milder flavor.

- Seasonings – Fennel seed, garlic salt, black pepper, crushed red pepper flakes.

How to Make the Best Sheet Pan Cabbage and Kielbasa Recipe
While this technique is simple, it takes a bit of adjusting through the braising process. It’s a terrific and flavorful low carb meal option.
- Heat Oven and Prepare Pan – Preheat oven to 450°F. Spray a large rimmed sheet pan or two pans with cooking spray.
- Arrange Cabbage on Pan – Spread chopped cabbage and onion on the pan.
- Add Oil and Seasonings – Drizzle cabbage with oil, bacon drippings, salt, pepper, fennel seed and crushed red pepper flakes, tossing to coat. (You can use more or less oil to your taste and/or spray with cooking spray)
- Oven – Place into the oven and bake, roasting for 10 minutes. Stir, then add kielbasa slices on top.
- Roast– Lower oven temp to 425°F and return to oven cooking per the recipe until cabbage is lightly charred and tender.
- Garnish – Serve immediately garnished with fresh parsley and crumbled bacon with a dollop of sour cream.

- A large rimmed baking sheet pan. When in doubt go larger, not smaller.
- Sharp knife and chopping board.
- Large skillet to fry the bacon.
- Measuring cups and spoons.
- Large spoon for stirring.
Cooking Tips for Sheet Pan Kielbasa and Cabbage Dinner
- Slice the Cabbage Uniformly for Even Cooking – Depending on the size of the cabbage pieces the cooking time may vary. The loose dark green leafy potions will naturally cook a little quicker than the firm interior. Think 1/3-1/2-inch ribbons of the exterior leaves and slightly thinner for the interior of the cabbage.
- Follow the Technique for Baking – I begin this cabbage recipe with a high oven temperature. What this does, is allow the cabbage to release liquid at the onset of baking. You’ll note, the steam rising from the cabbage during this time. Releasing the liquid enhances the overall flavor.
- Stir for Even Cooking – After the cabbage has released liquid, it’s time to begin caramelizing, so stir to prevent the hotter spots in the oven from over browning any one spot. Personally, I love these little brown bits, but there’s plenty of room to adjust according to your taste. If you want less caramelization, stop and stir it more often.
- Broil at the End of Cooking – At the end of braising in the oven you can brown the cabbage further by turning the oven to broil. It will caramelize quickly, so don’t walk away.

Recipe Variations and Substitutions
- Sausage – You could also use andouille sausage, chicken sausage, polish sausage or turkey sausage in place of kielbasa. Any smoked sausage that you enjoy will work.
- Cabbage – You could use savoy cabbage in place of green cabbage. It’s not quite as thick and hearty as green cabbage, so adjust the cooking time as needed.
- Butter – If you prefer, you can use butter in place of the bacon drippings.
- Seasonings – You could use granulated garlic or garlic powder and table salt instead of garlic salt and add a dusting of onion powder to the mix.
- Potatoes – You can add cooked potatoes to the pan, too. Red potatoes, russet potatoes or Yukon gold potatoes would all work. Start with parboiled fork tender cubed potatoes, tossed with a little olive oil. Add to the pan with the kielbasa. If you’re keeping this keto, omit the extra carbs.
- Apples – You could cut up a Granny Smith apple or two and add it to the cabbage mixture.
- Herbs – You could swap out the parsley for chives, dill or cilantro.
- Vegetables – You could add shredded or sliced carrots to the cabbage in place of potatoes.
- Mustard – You may enjoy serving this dish with a side of grainy mustard, a mustard vinaigrette, Creole mustard or Dijon mustard.
- Garlic Cloves – You could add 3 large cloves of minced garlic or use shallot in place of onion.
- Lighter Option – Use cooking spray in place of oil, omit bacon and use turkey kielbasa.

Storage and Leftovers
- Leftovers – Store leftover baked cabbage and kielbasa in an airtight container chilled in the refrigerator for up to 3 days.
- Reheating – Reheat in a skillet over medium heat or in the microwave in single servings.
- Freezing – You can freeze leftovers for up to 2 months. Thaw in the fridge and reheat on the stove in a skillet over medium heat.

- Serve immediately garnished with fresh parsley and crumbled bacon and a dollop of sour cream.

Brilliant idea! Delicious flavors! Being of Eastern European/Slavic descent and married to a great guy whose heritage is mostly Polish, this dish was perfect for us! I added garlic powder and a little smoked paprika to the pan!
