  • 1/2 lb bacon (about 8 slices)
  • 2 1/2-3 lbs fresh green beans trimmed
  • 1 medium sweet onion diced
  • 3 large garlic cloves minced
  • 2-3 tsp garlic salt adjust to taste
  • 1-2 tsp black pepper adjust to taste
  • 2 cups chicken stock or chicken broth
  • 1/2 cup unsalted butter sliced

Instructions

  • Rinse green beans with cold water and trim the ends.
  • In a large skillet on the stovetop fry bacon over medium-high heat until crispy. Remove to paper towels to drain grease, then chop. Leave drippings in pan.
  • To the bacon grease, add the onion and garlic. Cook for 2-3 minutes until softened and beginning to brown.
  • Toss green beans with the onion mixture, along with garlic salt and black pepper. Stir to combine, then transfer to the slow cooker.
  • Drizzle the top of the beans with chicken stock and arrange butter slices over the green beans.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until tender.
  • Taste beans and adjust salt and black pepper to your taste. Stir in chopped bacon reserving some to sprinkle on top.
  • Scoop and serve or transfer to a serving platter.
