- Flour – You can make this 7up pound cake with cake flour or all purpose flour. Cake flour will give you a more tender crumb.
- 7up – You could opt to use Sprite in place of 7up. You could also substitute full sugar soda for diet 7up. It won’t add to the sweetness but the carbonation will still give lift to the texture of the cake.
- Leaveners – You’ll note there’s no baking powder or baking soda in this recipe. The eggs and 7up work the magic for the leavening.
- Optional Topping – You can serve this bundt cake as is simply dusted with powdered sugar or with the optional glaze that features the same lemon lime flavor.
- Instant Pudding Mix – If you’d like to bump up the lemon flavor, you can add one 3.4 ounce package of instant lemon pudding mix sifted with the dry ingredients. You could also add 1 tablespoon of fresh lemon zest.
- Glaze – To make a simple glaze, mix together powdered sugar with enough 7 Up until it’s drizzle consistency adding a splash of lemon extract for a boost of flavor. Once smooth, drizzle it over the cooled cake.
Storage and Leftovers
- Serving Options – When entertaining, I like to slice the pound cake beforehand and arrange the slices on a cake pedestal demonstrated in the images. I prefer this method as it prevents my guests from having to fumble with cutting their own piece and it’s such a pretty presentation.
- Fresh Fruit and Toppings – You can then serve pound cake with fresh berries such as strawberries, raspberries, blackberries or blueberries and whipped cream. You can also serve it with your favorite flavor of pie filling, lemon or lime curd and fresh whipped cream.
- Leftovers – You can store 7Up cake covered with plastic wrap, foil or in an airtight container chilled in the refrigerator for up to one week or at room temperature for up to 5 days.
- Freezer – You can freeze 7Up Pound cake for up to 2 months. When doing so, cool it completely then wrap in freezer safe plastic wrap. Thaw in the fridge and enjoy!

I made this cake today and it grew so high and what a beautiful cake. I decided not to ice it and it’s delicious. Thanks for the recipe Melissa
Wonderful!
The recipe states to add lemon and vanilla extract in the mix but I don’t see vanilla except for the glaze
There’s both vanilla and lemon in the cake batter and glaze. You could use only lemon or only vanilla, if that’s your preference.
