Easy Sheet Pan Breakfast Stacks Recipe
I started making these breakfast stacks out of pure necessity. Some mornings, it’s nearly impossible to get everyone to agree on what they want with their eggs. That’s when these delicious, customizable breakfast stacks came to the rescue! We call them “stacks” because you can layer them with just about anything your heart desires, bacon, sausage, veggies, cheese, or whatever you have on hand.
Not only are these easy breakfast stacks fun to personalize, but they’re also a budget-friendly meal idea that my family requests just as often for supper as they do for breakfast or brunch. Quick, hearty, and endlessly adaptable, these stacks make everyone happy, any time of day.

- Tater Tots – I used classic barrel shaped tater tots to form the base of the breakfast stacks.
- Cheese – Shredded Colby-Jack cheese forms the edible “glue” to hold the stack together and gives them that melty cheese flavor.
- Bacon – Cooked and crumbled classic bacon for a smoky flavor. , You could also use breakfast sausage or diced ham.
- Whole Eggs – Large or extra large eggs complete the triple breakfast stack and bind it together.
- Seasonings – Salt and black pepper.
- Garnish – Green onions for a mild onion flavor.
- Sour Cream adds a creaminess and enhances the potatoes, but this is optional.

How to Make the Best Easy Sheet Pan Breakfast Stacks Recipe
- Heat Oven and Prepare Pan – Preheat oven to 425°F. Liberally spray a standard sheet pan with cooking spray.
- Parbake the Tater Tots – At this point, you won’t bake them all the way. Arrange 12 tater tots into 4 separate squares on the pan. Place into the preheated oven and bake for 20 minutes.
- Make a Well – Make a well in the center of each tater tot square with the back of a spoon.
- Layer Ingredients – Layer the well with cheese and bacon then top each one with an egg to the top of each stack.
- Spices – Sprinkle with salt and black to your taste, then finish with more cheese.
- Oven – Bake per the cooking time in the recipe.
- Serve – Serve immediately with a dollop of sour cream and garnished with green onions.

- Hashbrowns – I used the barrel shaped tater tots, but you could adapt using crispy crowns, too. You could also adapt using hash browns in a cake form, as well.

- Spices – You could use garlic salt for a hint of garlic and crushed red pepper flakes for spice.
- Fresh Herbs – You could use chives in place of green onions or garnish the top with fresh parsley.
- Adjust the Servings – This recipe can easily be adapted to make as many breakfast stacks as you need. You can make as few as two, or as many as twenty since the ingredients are easily adaptable either way.

Storage and Leftovers
- Leftovers – Sheet Pan Breakfast Stacks are best made and eaten fresh out of the oven. Should you have any leftover, you can chill them in the refrigerator in an airtight container for up to 3 days.
- Reheating – Reheat in single servings in the microwave or on a sheet pan in a preheated 350°F oven until heated through. You can also reheat them in an air fryer for a few minutes.
- Freezer – You could freeze leftovers for up to 1 month. Thaw in the fridge and reheat just before serving.

Easy Sheet Pan Breakfast Stacks
Ingredients
- 48 tater tots
- 1 cup finely shredded Colby-Jack cheese divided
- 6 slices bacon cooked and crumbled OR 6 oz sausage, cooked and crumbled
- 4 large eggs
- salt and black pepper to taste
- 2-3 medium green onions thinly sliced
- sour cream optional
Instructions
- Preheat oven to 425°F. Liberally spray a standard rimmed sheet pan liberally with nonstick cooking spray.
- Arrange 12 tater tots into 4 separate squares on the pan. Place into the preheated oven and bake for 20 minutes.
- Remove pan from the oven and use the back of a spoon to gently press the center of each tater tot crust making a slight indentation forming a well for the toppings. (It's not necessary to press it flat.)
- Divide 1/2 cup of cheese evenly over each portion of tater tots. Arrange the bacon over the cheese.
- Carefully crack one egg into a small bowl then transfer to the center of each stack allowing the egg white to spread over the tater tots forming a "glue."
- Season with salt and black pepper to your taste. Sprinkle the tops of each egg with the remaining shredded cheese.
- Bake for an additional 6-10 minutes or until the egg is cooked to your preference and the cheese is lightly golden brown.
- Sprinkle with green onions and top with a dollop of sour cream, if desired.

Have you ever done this with a beaten egg so the eggs are scrambled instead of soft cooked? Looks like a yummy breakfast idea!
Hi Leah, that’s a great question. I haven’t but, think it would work. It may be better, if you soft scrambled them on the stove, then piled onto the tater tots and topped with cheese in the last 5 minutes of baking.
