- Prepare Pan and Heat Oven – Preheat oven to 400°F. Liberally spray a large baking sheet with cooking spray or brush with oil.
- Trim Cabbage – Trim stem of cabbage to level. Cut cabbage into 1-inch slices from top to bottom, around the core, leaving internal core intact. (You can cut out the core, but leaving it in place helps the leaves stay together while slicing.)
- Combine Oil and Spices – In a small bowl mix together oil, salt, onion powder, black pepper, red pepper flakes, parsley and garlic. Stir well.
- Baste Cabbage – Brush liberally on all sides of cabbage steaks. Sprinkle tops with grated Parmesan cheese.

Tips for Making Southern Baked Cabbage
- Kitchen Tools You’ll Need: A large sheet pan, sharp knife and cutting board, small bowl, pastry brush, measuring cups and spoons.
- Level the Cabbage: Take a moment to trim the core of the cabbage, so it’s level for cutting. Use a large, sharp knife to slice.
- One Inch Thick Slices: I recommend cutting the cabbage slices about 1-inch thick. Keep in mind that the cabbage will shrink while roasting.
- Adjust the Bake Time Based on Size: You can adapt this recipe using any size head of cabbage. Keep in mind, larger cabbage steaks may take a few minutes longer to bake. Likewise, smaller slices may take less time. Adjust accordingly.
- Char Under the Broiler: At the end of roasting the cabbage steaks, you can turn the oven to broil to char the leaves further. The charred pieces have a slight sweetness that enhances the overall flavor.
- How to Serve Baked Cabbage: Serve this as a low carb side dish with steak, chicken or pork. If carbs aren’t a consideration serve it alongside cornbread and beans, meatloaf or fried chicken.

Recipe Variations
- Cooking Spray: To lighten-up the calories in this dish a bit, you could use cooking spray or an oil spritzer in place of olive oil.
- Brush with Bacon Drippings: You could also brush the cabbage with bacon grease for a smoky flavor and then top it with the crispy bacon or cooked turkey bacon.
- Garlic: There’s a generous amount of garlic in this dish as we’re huge garlic fans. You can use more, or less, according to your personal taste and that of your family. You could also use garlic powder, instead.
- Use a Combination of Oil and Butter: The amount of oil can be adapted to your personal taste or dietary needs. You can use half melted butter mixed with the olive oil. I don’t recommend using butter alone for this Southern baked cabbage recipe due to its smoke point.
Storage and Leftovers
- Leftovers: Store Roasted Cabbage Steaks in an airtight container chilled in the refrigerator for up to 3 days.
- Reheating Southern Baked Cabbage: Reheat in a non-stick skillet on the stovetop over medium heat or chop and toss with smoked sausage and diced cooked potatoes for a delicious round two meal.

Hi Melissa: I assume using red cabbage would work just as well? We received a box in our CSA box recently.
Hi Lynn red cabbage will work, sure!
Sorry, I meant we received a head of red cabbage in our CSA box 🙂
I made this and loved it.
I’m so happy you enjoyed it!
How should I reheat left overs?
You can reheat in the microwave or a 350°F oven.
Thank you!
How would you store leftovers ? Thanks.
Store leftovers chilled.
What does “rotate pan” mean?
Turn the pan.
I have made many of your recipes from your web site and they were all fantastic. I’m in a pickle now just found out I have cancer in my esophagus and swallowing is a chore , I need some soup recipes please. Thanks Eric
Hi Eric, I’m so sorry to hear of your health issues. I have quite a few soup recipes, please browse soups here when you have a moment to see if there are any you’d like to try. Sending prayers.
We love roasted cabbage. We don’t eat meat. What would you suggest to serve the cabbage with? I am drawing a blank. Thank you in advance!
Maybe, mashed potatoes and green beans or a vegetarian fried rice.
Loved the seasoning- did not sure the Parmesan and had to use dried parsley. Next time will use a little less salt tho.
When you say rotate the pan or you meaning to turn the cabbage steaks over to the other side
No, actually turn the pan. There’s no need to flip the cabbage.
Hi! I’m getting ready to make this. Do I need to use the oil?
This recipe was developed using oil as described. You can adapt it using cooking spray, if that’s what you’re asking.
