- Butter – In a heavy bottomed pan melt the butter over medium heat.
- Cream – Add the cream and bring to a boil. Immediately lower the heat to a simmer stirring constantly. Cook for 7 minutes until the consistency of the alfredo sauce begins to thicken.
- Parmesan Cheese – Remove the saucepan from the heat and add the grated Parmesan cheese.
- Season – Add a dash of nutmeg and black or white pepper to your taste. Stir until the cheese is completely melted.
- Serve immediately tossed with the cooked fettuccine and a sprinkle of freshly grated Parmesan cheese.
How to Make the Best Fettuccine Alfredo Recipe
Alfredo is not a low calorie or low fat sauce but then again, we all know this. It’s beloved for its rich buttery texture and the salty bite from the Parmesan cheese. While it is simple to make there are a couple of things you need to consider.
- Ingredients you’ll need to make homemade Fettuccine Alfredo: Cooked fettuccine, butter, heavy cream or whipping cream, grated Parmesan cheese, salt, black pepper or white pepper and a pinch of nutmeg.
- Kitchen tools you’ll need: A pasta cooker or large pot, heavy bottomed saucepan, whisk, cheese grater, measuring cups and teaspoons and tablespoons.
- When a recipe requires only a few ingredients they should be the very best ingredients you can afford to use. That said, I would never dream of making this sauce for Fettuccine Alfredo with Parmesan cheese from a can. It has to be fresh.
- Why grate Parmesan fresh? Well for one, the texture of the alfredo sauce won’t be smooth if using the canned cheese. It can give a grainy texture to the Alfredo sauce that no amount of cooking and whisking will remove, so definitely grate your own fresh Parmesan.
- Why is there nutmeg in Alfredo sauce? Nutmeg is the secret ingredients and goes hand in hand with cream sauces. It adds a subtle dimension to flavor of the Alfredo sauce. Don’t forget the dash or two of nutmeg to make it truly decadent.
- Variations for Alfredo Sauce: You can add minced garlic cloves or garlic powder, fresh herbs or use pecorino Romano cheese in place of Parmesan cheese.
- Once you combine the alfredo sauce with the pasta, you can thin the sauce using pasta water.
