I've been there, and that's why I find that doling a little pre-planning helps this issue immensely. The days you wait to decide what your having for dinner, are the days it's most tempting to buy. My family thinks this stir-fry chicken and broccoli is better than take-out, there's no need for a fake-out here. When you see how simple it is to prepare, you may never buy chicken stir-fry again.
- Ingredients you'll need to make homemade Chicken and Broccoli Stir Fry: Boneless skinless chicken breasts or thighs, broccoli florets, sesame oil or vegetable oil, ginger, green onions, garlic, water, hoison sauce, crushed red pepper flakes, toasted sesame seeds for garnishing and cooked white rice or sticky rice for serving.
- To make the marinade you'll need: Soy sauce, granulated sugar, cornstarch, garlic, sesame oil and green onions.
- Kitchen tools you'll need: A medium bowl, large plastic storage bag of shallow dish to marinate the chicken, measuring cups and spoons, sharp knife and chopping board, vegetable peeler large 12 inch skillet or similar size wok and whisk.
- To save time, prepare the marinade, and pour it over the chicken, then chill. Let the chicken bask in the flavors for at least 4 hours or overnight for an even bigger pop of flavor.
- You can also have the broccoli cleaned and prepped having it ready to go in a snap.
- After marinating the chicken, the actual cook time is around 10 minutes. It's packed with flavor, and the delicious sauce is good to the last drop. If your family loves sauce, the recipe easily doubles.

Chicken and Broccoli Stir-Fry

Ingredients
- 2 lb boneless skinless chicken breasts sliced into strips
- Marinade:
- ⅓ cup soy sauce
- 3 tablespoon granulated sugar
- 1 ½ tablespoon cornstarch
- 3 clove garlic minced
- 1 teaspoon fresh ginger minced or ½ teaspoon ground ginger
- 1 tablespoon sesame oil
- 2 green onion thinly sliced
- Stir-Fry:
- 6 tablespoon vegetable or peanut oil divided [more if needed]
- 4 cup broccoli florets
- 2 green onion thinly sliced, white only
- 1 teaspoon fresh ginger minced or ½ teaspoon ground ginger
- 3 clove garlic minced
- 3 tablespoon water
- ¼ cup hoison sauce [more if desired]
- 1 teaspoon red pepper flakes
- toasted sesame seeds
- cooked brown or white rice
Instructions
- Slice the chicken breasts into strips. Whisk together the soy sauce, sugar, cornstarch, minced garlic, ginger and sesame oil until the cornstarch has dissolved. Mix-in the sliced green onion.
- Place into a plastic storage bag, pour the marinade over chicken. Marinate for at least 4 hours or overnight.
- To stir-fry: Heat a few drizzles of vegetable or peanut oil in a hot skillet, around 3 Tbsp. Add the broccoli florets, green onion, ginger, minced garlic, 3 tablespoon water, and a sprinkle of salt and black pepper to your taste.
- Cook for 3 minutes or until crisp tender and bright green in color. Remove to a plate.
- Heat the remaining 3 tablespoon of oil. Remove chicken from marinade and add to hot skillet.
- Add 1 teaspoon red pepper flakes to the chicken. Stir fry for 3-4 minutes until the chicken has browned and cooked through. Add the broccoli back to the skillet.
- Drizzle with the ¼ cup hoison sauce, more if desired, continuing to saute 1-2 minutes until heated thru.
- Serve immediately over rice.
