Garlic Parmesan Fries

These crispy Garlic Parmesan Fries are made on a sheet pan in the oven. After roasting, they’re drizzled with homemade garlic butter, grated Parmesan cheese and a sprinkling of parsley just before serving.

Easy Garlic Parmesan Fries

If you’re not one inclined to deep fry, making french fries in the oven is the ideal option. I use russet potatoes in this recipe leaving the peel intact. Not only are the potatoes prettier this way but I really enjoy the flavor of the peel. Soaking the potatoes in cold water helps to remove some of the starch which results in the crispy exterior that we all look for in a french fry.   • Slice and Soak Potatoes – Use a sharp knife to slice potatoes into 1/4 inch strips. Place into a large bowl filled with cold water. Let soak for 20 minutes.
  • Prep the Garlic – Cut the top off the garlic head. Center on an 8 inch piece of aluminum foil. Drizzle with 1/2 Tbsp olive oil and season with 1/4 tsp salt. Bring the sides of the foil up to the center and twist. Set aside.
  • Drain Potatoes – Drain the potatoes and place onto a clean towel. Pat dry with paper towels. Place back into the bowl and pour the remaining 3 1/2 Tbsp olive oil over the potatoes, season with salt and pepper. Toss in the bowl until evenly coated.
  • Prepare the Pan – Preheat the oven to 450°F. Arrange fries in a single layer on a large sheet pan sprayed with cooking spray.
  • Bake – Bake french fries per the recipe flipping the fries halfway way through for even browning. (Place garlic foil packet into the oven with the fries. Check at 14-15 minutes and remove, if golden.)
  • Make Garlic Butter – Melt the butter in a small bowl in the microwave. Squeeze garlic cloves to remove from skin and chop finely. Add the garlic to the butter, mixing to combine. Stir in 1/2 of the Parmesan cheese.
  • Drizzle the garlic butter over the fries and gently toss to coat. Garnish with the remaining Parmesan and parsley and serve.

How to Make the Best Garlic Parmesan Fries Recipe

  • Ingredients you’ll need to make homemade Garlic Parmesan Fries: Russet potatoes, one medium garlic head, grated Parmesan cheese, fresh flat leaf parsley, olive oil, salt and pepper and butter.
  • Kitchen tools you’ll need: Two medium mixing bowls, sharp knife and cutting board, baking sheet, heavy duty aluminum foil, cheese grater.
  • Can I eat these warm or cold? These Garlic Parmesan Fries are best served hot and right out of the oven.
  • Roasting the garlic before mincing it is the key to the garlic butter in this recipe. Roasting the garlic takes the bite out of it and it tastes so rich and flavorful without getting that super strong garlic after taste.
  • The garlic can either be roasted in while the fries are roasting or before the fries go into the oven. Just place the foil wrapped garlic on the sheet pan for about 12-14 minutes. Unwrap the top and test to see if the garlic is finished roasting. It’s done when the cloves can easily be squeezed out of the papery skin.
  • If you like french fries on the crispy side, just cook them a few minutes longer. If you like them softer, take them out a few minutes early. It’s really your preference.
  • If you have the time, let the potato sticks soak in the cold water for 20-30 minutes. This helps release some of the starch from the potato and results in a crispier french fry.
  • If preferred, you can make the garlic butter on the stovetop. To do so, mince the garlic (Using as many garlic cloves or as few according to your taste) and add to a small saucepan with the butter. Simmer on low for 5 minutes just until the garlic is softened and the butter is infused with flavor.
  • I love dipping these fries in a creamy ranch or garlic aioli sauce. Ketchup is always a safe bet, too.
  • Variations and substitutions: If you would like to add more spices to the fries, like paprika, Cajun seasoning or chipotle or cayenne to added heat. When doing so, add the seasoning when the fries are being tossed in the oil right before cooking.
  • Adding fresh parsley adds color and balances the richness of the french fries. In this instant, it serves a two fold purpose, so I recommend not skimping on the parsley.
  • Quick tip: If you would like to save time, you could use a quality bag of store bought frozen french fries. Cook them  according to the instructions on the package and toss them with the garlic butter per the recipe just before serving.

  • Storage Instructions: Store the fries in an airtight container chilled in the refrigerator for up to 3 days.
  • To reheat, place the fries in an air fryer for 2-3 minutes or on a baking sheet and into a 375°F oven for 6 minutes or just until crisped. I don’t recommend reheating these in the microwave.
