When apples arrive I'm reminded of my love for them and apple desserts like this Harvest Apple Bread. We gravitate to our love of apples in any way, shape or form. I think that's likely to be pretty universal when it comes to apple desserts to love. The beauty of this sort of cake-like quick bread is, that it freezes like a dream when you need to bake it in advance. It's mighty handy to have it ready in the freezer for convenience in a pinch.
Harvest Apple Bread Recipe
This harvest bread is one more way to enjoy apples. It's made with a spice-laced batter that's combined with coconut and toasted nuts for a classic combination that hits it out of the park every time. If you're planning in advance of a special occasion it freezes well, too. Serve it this apple bread warm slathered with honey butter or cinnamon cream cheese. It's equally delicious at room temperature with a steamy cup of coffee or hot tea. Each bite tastes just like fall. Harvest Apple Bread
Servings: 12 slices

Ingredients
- 2 cup all-purpose flour
- 1 ½ teaspoon apple pie spice [see Cook's note]
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup vegetable oil
- ¾ cup granulated sugar
- ¾ cup light brown sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs
- ⅓ cup buttermilk
- 1 cup pecans or walnuts chopped and toasted
- 1 cup sweetened flaked coconut
- 1 ½ cup finely diced apple
Instructions
- Preheat the oven to 300°F. Spray a 9 x 5 " loaf pan with baking spray or butter and flour.
- Sift together the flour, apple pie spice, baking soda and salt. In a medium size mixing bowl, Beat together the vegetable oil, granulated sugar, brown sugar and vanilla until combined. Add the eggs and beat for 1 minute until combined.
- Add the sifted dry ingredients alternately with the buttermilk. Stop and scrape the sides of the bowl as needed.
- Add the nuts, coconut and diced apple. Mix in by hand. Reserve 2 tablespoon of nuts to sprinkle on top.
- Spread into the loaf pan and top with reserved nuts. Bounce the pan on the counter to settle the batter.
- Bake for 1 hour 20-30 minutes or until a tester inserted into the center shows moist crumbs. Cool in the pan for 1 hour, then remove to a wire rack to cool completely before slicing.

DIY apple pie spice: Mix together until blended
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground allspice
⅛ teaspoon ground cardamom

You can leave them out. It will definitely change the texture of the bread but you could omit if there's an allergy or you don't care for them.

Baked it at 300 degrees for 1 hr & 20 mins.,didnt look done so, i baked it another 10 mins.Same look & real light colored still.Went additional 5 mins.Cooled& sliced it ,it looks doughy inside still but the flavor is there.Is it suppose to look moisty uncooked some? Or is it suppose to look this way? My breads in the past didnt look like its uncooked,-Strange..
