This Southern cabbage recipe features cabbage steaks which are an elegant option for serving what can be considered, a somewhat ordinary vegetable. It’s soul food that’s lower in carbs and, packed with flavor. The roasting process brings out the natural sweetness of this tender cabbage. It’s both good and good for you!   • Cabbage: One medium head of green cabbage.
  • Oil: Olive oil for brushing and charring the cabbage.
  • Seasonings: Salt, onion powder, black pepper and crushed red pepper flakes for spiceiness.
  • Herbs: Chopped fresh parsley.
  • Garlic: 4-6 cloves garlic.
  • Cheese: Grated Parmesan cheese forms a light crust.

How to Make the Best Oven Roasted Cabbage Steaks Recipe

  • Prepare Pan and Heat Oven – Preheat oven to 400°F. Liberally spray a large baking sheet with cooking spray or brush with oil.
  • Trim Cabbage – Trim stem of cabbage to level. Cut cabbage into 1-inch slices from top to bottom, around the core, leaving internal core intact. (You can cut out the core, but leaving it in place helps the leaves stay together while slicing.)
  • Combine Oil and Spices – In a small bowl mix together oil, salt, onion powder, black pepper, red pepper flakes, parsley and garlic. Stir well.
  • Baste Cabbage – Brush liberally on all sides of cabbage steaks. Sprinkle tops with grated Parmesan cheese.
  • Oven – Bake the cabbage steaks per the recipe until golden, lightly charred and fork tender. You can broil for a few minutes to char the tender cabbage further, if desired. Serve immediately.

Tips for Making Southern Baked Cabbage

  • Kitchen Tools You’ll Need: A large sheet pan, sharp knife and cutting board, small bowl, pastry brush, measuring cups and spoons.
  • Level the Cabbage: Take a moment to trim the core of the cabbage, so it’s level for cutting. Use a large, sharp knife to slice.
  • One Inch Thick Slices: I recommend cutting the cabbage slices about 1-inch thick. Keep in mind that the cabbage will shrink while roasting.
  • Adjust the Bake Time Based on Size: You can adapt this recipe using any size head of cabbage. Keep in mind, larger cabbage steaks may take a few minutes longer to bake. Likewise, smaller slices may take less time. Adjust accordingly.
  • Char Under the Broiler: At the end of roasting the cabbage steaks, you can turn the oven to broil to char the leaves further. The charred pieces have a slight sweetness that enhances the overall flavor.
  • How to Serve Baked Cabbage: Serve this as a low carb side dish with steak, chicken or pork. If carbs aren’t a consideration serve it alongside cornbread and beans, meatloaf or fried chicken.

  • Garlic: There’s a generous amount of garlic in this dish as we’re huge garlic fans. You can use more, or less, according to your personal taste and that of your family. You could also use garlic powder, instead.
  • Use a Combination of Oil and Butter: The amount of oil can be adapted to your personal taste or dietary needs.You can use half melted butter mixed with the olive oil. I don’t recommend using butter alone for this Southern baked cabbage recipe due to its smoke point.

    Loved the seasoning- did not sure the Parmesan and had to use dried parsley. Next time will use a little less salt tho.
