Ingredients to Make Hot Dog Macaroni and Cheese Recipe

Casseroles are one of my favorite go-to meals, especially for busy weeknights and potlucks. One-dish recipes like Supreme Pizza Tortellini Bake and Chicken Cordon Bleu Casserole are family favorites around here. I love that most casseroles can be prepped ahead of time, chilled, and simply popped in the oven when it’s time to eat. Even better? When they’re packed with flavor, just like this cheesy, comforting mac and cheese casserole dish.

  • Hot Dogs – You can use your favorite brand of quality hot dogs.
  • Pasta – Jumbo elbow macaroni or classic elbow macaroni is classic in mac and cheese. Either pasta works.
  • Cheese – Shredded sharp cheddar cheese gives the casserole its signature flavor.
  • Bacon – Bacon adds a smoky flavor.
  • Butter – Salted or unsalted butter to make the roux.

How to Make the BEST Hot Dog Cheesy Macaroni Casserole

  • Heat Oven and Prepare Dish – Preheat the oven to 350°F. Spray a 13×9-inch baking dish with cooking spray.
  • Cook Macaroni – Cook the macaroni in a large pot of water per the package directions until al dente. Drain well.
  • Sauté the Onion – Cook onions over medium-high heat in butter with bacon drippings until softened.
  • Add Seasonings and Flour for the Roux – Lower the heat to medium and add the flour, garlic salt, mustard and black pepper. Stir until the flour has absorbed the butter. Cook stirring constantly for 1 minute.
  • Liquid – Gradually whisk in the milk, simmer until thickened.
  • Cheddar Cheese – Add cheddar cheese and crumbled bacon. Stir until the cheese has melted.
  • Combine with Pasta – Pour cheese sauce over cooked macaroni then mix in hot dog pieces.
  • Transfer to Dish – Pour into the baking dish. Top with the remaining 1 cup of cheese.
  • Oven – Bake per the recipe until golden and bubbly.
  • Garnish with reserved bacon crumbles and sliced green onion. Serve immediately.

Kitchen Equipment to Make Hot Dog Mac and Cheese Casserole

  • Pasta pot or large pot for boiling the macaroni.
  • Large saucepan to make the cheese sauce.
  • Cheese grater. I highly recommend grating your own cheese for this casserole. Bagged cheese has been coated to keep the shreds from sticking together and can cause the sauce to separate.
  • Large mixing bowl. If you use a large pot to make the pasta, it could double as the mixing bowl.
  • Measuring cups and spoons.
  • Sharp knife and chopping board.
  • One 13×9-inch baking dish.

Recipe Variations, Tips and Substitutions

  • Hot Dogs – You can use beef hot dogs, turkey hot dogs, chicken hot dogs or pork hot dogs in this recipe. I highly recommend using a premium hot dog for the best flavor. Go with a brand that you enjoy and you’ll be good to go. You could also adapt this recipe using smoked sausages.
  • Pasta – I use jumbo elbow macaroni in this recipe just because we love it. Please note that classic elbow macaroni will work as well. Jumbo macaroni has ridges which really holds onto the sauce. You could also use any similar size pasta.
  • Bacon – The cheese sauce has a hint of smokiness from the bacon which adds another layer of flavor. You could use turkey bacon or omit the bacon, if desired.
  • Cheese – You could use medium cheddar cheese, white cheddar, colby jack cheese or spicy pepper jack cheese.
  • Spices – You could use plain salt and garlic powder in place of garlic salt. You could also add a few dashes of hot sauce or a pinch of cayenne or chili powder for spice.
  • Vegetables – You could add steamed broccoli florets or a handful of baby spinach leaves.
  • How to Serve Hot Dog Macaroni and Cheese – Enjoy a side of Fried Green Beans, Lima Beans or a simple bag of your favorite steamed vegetables. A Seven Layer Salad would also be a stellar choice.

Storage and Leftovers

  • Leftovers – You can store leftover Hot Dog Macaroni and Cheese Casserole covered with plastic wrap, aluminum foil or in an airtight container chilled in the refrigerator for up to 3 days.
  • Reheating – Reheat in single servings in the microwave or in a preheated 350°F oven for 20 minutes or until heated through.
  • Freezer – You can freeze leftovers for up to 2 months. Thaw in the fridge and reheat just before serving.

Ingredients

  • 1 16 oz box jumbo or classic elbow macaroni
  • 6 slices bacon cooked and crumbled, reserve 2 Tbsp drippings
  • 7 Tbsp butter divided use
  • 1 small sweet onion finely diced
  • 1/2 cup all-purpose flour
  • 2 tsp garlic salt
  • 2 tsp ground mustard
  • 1 tsp black pepper
  • 4 cup whole milk
  • 4 cups shredded sharp cheddar cheese divided use
  • 8 bun length quality all-beef hot dogs. 1/4 inch slice i.e. Nathan’s
  • 2 green onion thinly sliced

Instructions

  • Preheat the oven to 350°F. Spray a 13×9-inch baking dish with nonstick cooking spray. Set aside.
  • Cook the macaroni in a large pot of salted water per the package directions until al dente. Drain well.
  • Meanwhile, in a separate pan over medium-high heat melt butter (6 tablespoons) with reserved 2 tablespoons bacon drippings. Add diced onion.
  • Cook onions for 3 minutes until the onion has softened. Lower the heat to medium and add the flour, garlic salt, mustard and black pepper. Stir until the flour has absorbed the butter. Cook stirring constantly for 1 minute.
  • Gradually whisk in the milk. Bring to a boil then immediately lower heat to low setting. Allow to bubble gently for 5 minutes to thicken.
  • Remove sauce from heat. Add 3 cups of the cheese and crumbled bacon. Stir until the cheese has melted. (Reserve 2 Tbsp crumbled bacon for garnishing.)
  • Pour sauce over macaroni. Add hot dog pieces. Stir until the macaroni is evenly coated with the sauce and the hot dogs are evenly distributed. Pour the mixture into the prepared baking dish.
  • Top with the remaining 1 cup of cheese. Dot with remaining 1 Tbsp butter.
  • Bake for 30-35 minutes or until golden brown and bubbly.
  • Garnish with bacon crumbles and sliced green onion. Serve immediately.

    Our fridge/freezer conked out and I was suddenly needing to use up some items (ie: hot dogs, milk, cheese, bacon…) and began scouring Pinterest for ideas. THIS recipe was a lifesaver. My husband, middle son and I are all ‘foodies’, so I was sceptical and rarely eat hot dogs, but thought at least it will be comfort food. The only things I changed was adding a bit of taco seasoning and cooking more noodles as I used a bigger pan than suggested here.

    Oh my word, I wanted to eat it before it went in the oven because it looked and smelled so good with that heavenly sauce. But it was worth the wait and so delicious. Everyone had seconds and asked me to make it again.

    Seriously, that sauce is golden and I never would have thought of adding bacon and bacon grease, so thank you very much for the recipe!!

    This was really good. I didn’t use any bacon and used Olive Oil to substitute for the bacon grease. The sauce seemed a little too mild for my taste so next time I’ll increase the amount of spices and will add salt. The guys liked it but asked for more hot dogs next time also.

    1. Please note, there’s already 2 tsp salt in this recipe. It’s certainly fine to adapt using oil, but it absolutely will affect the flavor as you experienced.

  3. Can this be frozen? I want to freeze it in separate containers so my grandson can freeze Them when gets back to college.

      My grandson loved it he said it was the best Mac & cheese he had. He is in town this week and asked me to make it for him to take back with him.
      I am assuming I can use 2% milk I don’t to make another trip to the store.

    1. No need to, they’ll cook in the oven. That said, if you have leftover grilled hot dogs you can certainly slice and use those in this for a round 2 meal.

    Hi Melissa! Fellow food blogger here! I don’t cook with much gluten or dairy over on my corner of the Interent, so when I decided I was going to serve macaroni and cheese at our annual friends Christmas shindig, I knew I was going to need to call in some back-up. That’s where this recipe came in (I found it on Pinterest)!

    So I kept it gluten-free by using a 1:1 gluten-free flour and gluten-free rice pasta while following the rest of your recipe to a tee and oh my goodness gracious -it turned out FANTASTIC. Not one person questioned whether or not it was gluten-free and both pans (I doubled the recipe) were demolished by the end of the night!
