Italian Sausage Stromboli
This family-style Italian Sausage Stromboli will elevate Italian night to another level. It starts with pizza dough, topped with a layer of sweet Italian sausage, a generous helping of mozzarella cheese and a drizzle of pizza sauce. You can add sautéed peppers, olives, ham, pepperoni or any other topping that suits your fancy to make it your own. This Italian Sausage Stromboli has all of the makings of a classic Italian feast.

Ingredients to Make Easy Italian Sausage Stromboli Recipe
I make several versions of this type of roll-up bread, and my family never gets tired of them. My Barbecue Chicken and Jalapeno Pizza Bread is another variation that remains a fan favorite. What’s the difference between a stromboli and a calzone? The difference between stromboli and calzones is; stromboli’s are rolled and calzones are typically stuffed and folded like a pizza turnover. Just like pizza, the ingredient combinations are endless. You can serve this with a salad for a 30 minute meal or alongside veggies and dip as an appetizer. - Italian Sausage: One pound spicy Italian sausage. You can use mild.
- Pizza Dough: One 13.4 ounce tube refrigerated pizza crust (i.e. Pillsbury Classic) or 1 pound homemade pizza dough.
- Onion: Adds flavor to the Italian sausage.
- Garlic: Fresh minced garlic expands the flavor and adds a hint of spice.
- Pizza Sauce: Prepared 1/2 cup pizza sauce adds moisture and enhances the flavor.
- Shredded Cheese: Two cups shredded mozzarella cheese forms the edible glue to hold everything together.
- Melted Butter: To brush the pizza dough giving it a golden color.
- Parmesan Cheese: For seasoning the dough and giving it a golden crust.
- Seasonings: Dried Italian seasoning, onion powder and garlic salt or garlic powder.

How to Make the BEST Italian Sausage Stromboli Recipe
- Cook Italian Sausage – Sauté the onion in olive oil over medium-high heat until softened. Add garlic and Italian sausage to the pan. Cook over medium-high heat until no pink remains then drain any excess fat from the pan.
- Pizza Dough – Roll or press dough into roughly a 12×16-inch rectangle.
- Assemble – Sprinkle crust with half of the shredded mozzarella cheese.
- Sausage – Arrange the sausage mixture on top, then drizzle with the pizza sauce.
- Mozzarella Cheese – Top with the remaining shredded cheese.
- Roll Jelly Roll Style – Begin to roll starting from the widest edge. Pinch the dough to seal.
- Transfer to a Pan – Transfer to a baking sheet seam side down.
- Melted Butter – Brush the top and sides with melted butter, then sprinkle seasonings and Parmesan cheese.
- Oven – Bake per the cook time in the recipe until golden brown and cooked through.
- Let Stand – Remove from the oven and let stand for 5 minutes before cutting into 1-inch slices.
- Serve – Serve with additional pizza sauce on the side for dipping.
Tips for Making Sausage Stromboli Recipe
- Kitchen Tools You’ll Need: Large sheet pan, measuring cups and spoons, large skillet, sharp knife and cutting board, cheese grater, small bowl and pastry brush.
- Refrigerated Pizza Dough: I purposely use refrigerated pizza dough for this stromboli as it was designed to bake quickly and thoroughly. No yeast required! Afterall, the goal here is an easy weeknight meal.
- Using Homemade Pizza Dough: Should you choose to use homemade pizza dough, be aware it should be rolled very thin or it won’t bake all the way through. Alternately, form homemade dough into a circle, fill one side then fold it over and pinch the crust like a calzone. Homemade pizza dough will bake more thoroughly when making it this way.

- Serving Suggestions: Serve stromboli as an entree with pasta and a salad or in 1-inch pieces as an appetizer or snack.

Recipe Variations
- Sausage: You can use mild or spicy Italian sausage for this recipe. You could also use turkey sausage.
- Additional Toppings: You could add mushrooms, black olives or bell peppers to the filling.
- Fresh Herbs: You can also add fresh herbs like oregano, fresh basil, and rosemary.
- Sauce: You can use marinara sauce or pizza sauce.
Storage and Leftovers
- Leftovers: Store baked Italian Sausage Stromboli chilled in the refrigerator for up to 3 days.
- Reheating: Reheat in single servings in the microwave or in an air fryer. You can also reheat in a preheated 350°F oven for several minutes, just until heated through.
- Freezer: You can freeze leftover stromboli wrapped in plastic wrap and heavy duty aluminum foil for up to 3 months. Thaw in the fridge and reheat just before serving.

Italian Sausage Stromboli
Ingredients
- 1 medium sweet onion finely diced
- 3 cloves garlic minced
- 1 lb spicy Italian sausage
- 1/2 cup pizza sauce plus add’l for dipping
- 2 cups shredded mozzarella cheese divided
- 1 13.4 oz tube refrigerated pizza crust [i.e. Pillsbury Classic] or 1 lb homemade pizza dough
- 1 Tbsp unsalted butter melted
- 1 Tbsp grated Parmesan cheese
- 1/2 tsp dry Italian seasoning
- 1/4 tsp onion powder
- 1/4 tsp garlic salt
Instructions
- Preheat the oven to 425°F. Line a sheet pan with parchment paper or a silicone baking mat.
- In a medium-size skillet saute the onion in a couple of drizzles of olive oil for 2 minutes or until softened. Add garlic and saute for 1 minute longer. Add Italian sausage to the pan, cook until no pink remains. Drain any excess fat from the pan. Set aside.
- Roll or pat dough, stretching a 12×16-inch rectangle. Sprinkle with half of the shredded mozzarella cheese.
- Arrange the cooked sausage over cheese then drizzle with the pizza sauce.
- Top with the remaining shredded cheese. Begin to roll starting from the widest edge. Transfer seam side down on the prepared sheet pan.
- Brush the top and sides with melted butter, then sprinkle with Italian seasoning onion powder and garlic salt. Finish with Parmesan cheese.
- Bake for 18-20 minutes or until golden brown and cooked through. Remove from the oven and let stand for 5 minutes before cutting into 1-inch slices.
- Serve with additional pizza sauce for dipping, if desired.




I’d like to make this for a party in a few days. Already making it for tonight so, should I just go ahead and bake two and put it in the fridge or hold off and not assemble the second one until the day off?
Hi Janet, you can assemble the second one the day before you plan on serving it, but I’m not sure you should assemble it too many days in advance. It’s fine to prep the ingredients in advance, but don’t assemble it until closer to serving time.

Insanely delicious! I used homemade dough and didn’t notice the note about rolling it VERY THIN until after it was in the oven. My homemade dough normally bakes for 30-35 minutes, so I tented the stromboli with tin foil after 10 minutes and then baked for 25 more. It came out perfect!

This was easy and quick and so yummy! Everyone loved it. I put it together earlier in the day up to the part where you brush it with melted butter and sprinkle seasoning on top. Stored it covered in the fridge until I was ready. Once I was ready for it, I pulled it out and proceeded with the topping and baked it. I used mild Italian sausage and served it with a side of warm pizza sauce for dipping.

This is a wonderful easy recipe for Stromboli. I would add that you cut the slits on the top, it makes it cook better and no soggy-ness from vegetables (if you add more that tends to happen).
