I can’t think of many meals where a side of bread isn’t the ideal accompaniment. At our house, bread doubles as a scoop for dips and sauces as well as dipping in soups and stews. Italian dishes go hand in glove with a side salad and bread to sop up the sauce. The beauty of this recipe is, there’s no need for measuring all purpose flour, blooming active dry yeast, kneading or rising dough to make this cheesy bread.
The herby goodness is made using a combination of fresh herbs. This garlic herb cheese bread features a classic trio of parsley, basil and rosemary. I’ve served this bread both as a side dish and an appetizer with warm pizza sauce or marinara for dipping. You can serve this bread straight from the oven or wrapped in foil and grilled when camping or hosting a backyard barbecue.

How to Make Cheesy Garlic and Herb Bread Recipe
- Heat Oven and Prepare Pan – Preheat oven to 350°F. Set aside a baking sheet. Prepare a large piece of heavy duty foil, Spritzed lightly with cooking spray.
- Prep and Slice the Bread – Use a sharp knife to cut 12 diagonal slices through bread without cutting all the way to the bottom.
- Make Seasoned Garlic Butter – Whip together butter, Parmesan, parsley, basil, rosemary, salt and garlic. You can do this by hand or with a mixer.
- Assemble the Garlic Herb and Cheese Bread – Spread each slice with garlic and herb butter reserving 1 Tbsp to spread on top. Place two half pieces of cheese into each cut. Spread remaining garlic and herb butter over top and sides of loaf.
- Wrap in Foil – Place onto foil and bring edges up to seal. Place onto baking sheet.
- Oven – Bake per the cook time in the recipe until the cheese has melted and the bread is toasted and golden brown. Open foil and broil top, if desired. Serve immediately.

- Fresh Herb Mixture – You can use chives, thyme or oregano in place of parsley or basil. Rosemary has a very robust flavor, so you can adjust the amount to your taste, if desired.

- Cheese – Mozzarella and provolone are my go-to for this cheese bread recipe. That said, you could use colby jack cheese, gruyere cheese, gouda cheese, sharp cheddar cheese or pepper jack cheese for spice.
- Cut Cheese Slices in Half – Use one full slice of cheese cut in half for each slice. It’s easier to stuff between the slices when cut in half.

- Make-Ahead Tip for the Butter – The garlic herb butter can be made one day in advance, placed into an airtight container and chilled in the refrigerator until assembling the bread.

- 2 Tbsp grated Parmesan cheese
- 1 Tbsp chopped fresh Italian parsley
