This Doritos Casserole is baked until the cheese is bubbly and the edges are golden brown, resulting in a deliciously satisfying dish that’s perfect for a casual family dinner or a fun gathering.   • Chips – One bag Nacho Cheese Doritos, roughly crushed.
  • Meat – Lean ground beef forms the meat layer.
  • Vegetables – Sweet onion or yellow onion, poblano pepper or jalapeno pepper for spice.
  • Oil – Olive oil to sauté the meat, onion and peppers.
  • Salsa – Chunky salsa you can use mild, medium or hot depending on your personal preference.
  • Condensed Soup – Nacho cheese soup or cheddar cheese soup adds a creaminess to the filling.
  • Seasonings – Taco seasoning, dark chili powder, garlic salt, lemon pepper and ground cumin.

How to Make the BEST Doritos Casserole Recipe

  • Heat Oven and Prepare Dish – Preheat the oven spray a 13×9-inch baking dish with cooking spray.
  • Sauté Ground Beef – In a large skillet cook the ground beef, onion and poblano pepper over medium-high heat until no pink remains. Drain excess grease from the pan.
  • Salsa and Seasonings – To the skillet add the salsa, soup, taco seasoning, chili powder, garlic salt, lemon pepper and cumin. Simmer over medium just until combined.
  • Assemble the Layers – Arrange one third of the crushed Doritos on the bottom of the casserole dish. Cover with half of the beef mixture. Sprinkle with shredded cheese. Repeat layers one third Doritos, remaining ground beef and shredded cheese.
  • Cover – Top with final one third of Doritos and remaining cup cheese. Lay a loose piece of foil on top.
  • Oven – Bake per the recipe, then remove the foil. Continue to bake until the cheese has melted and the top is golden brown.

  • Can I Use Tortilla Chips? Yes, you can make this casserole using tortilla chips in place of Dorito chips.

Ingredients

  • 1 9.25 oz bag Nacho Cheese Doritos crushed
  • 2 lbs lean ground beef
  • 1 medium onion diced
  • 1 small poblano pepper or jalapeno pepper seeded and diced
  • 2 Tbsp olive oil
  • 1 24 oz jar chunky salsa use mild, medium or hot
  • 1 10 oz can nacho cheese soup or cheddar cheese soup
  • 1 1.0 oz packet taco seasoning
  • 1 Tbsp dark chili powder
  • 1 1/2 tsp garlic salt
  • 1 tsp lemon pepper
  • 1 tsp ground cumin
  • 3 cups shredded colby jack cheese or cheddar cheese divided use
  • diced Roma tomatoes and green onions for garnishing, sour cream for serving

Instructions

  • Preheat the oven to 350°F. Spray a 13×9-inch baking dish with cooking spray. Set aside.
  • In a large skillet cook the ground beef, onion and poblano pepper in 2 Tbsp of olive oil. Cook over medium-high heat for 6-8 minutes or just until no pink remains. Drain excess grease from the pan.
  • To the skillet add the salsa, soup, taco seasoning, chili powder, garlic salt, lemon pepper and cumin. Simmer over medium for 3-4 minutes or just until combined stir periodically to prevent sticking, then remove from the heat.
  • Assemble: Arrange 1/3 of the crushed Doritos on the bottom of the casserole dish. Cover with half of the taco meat mixture. Sprinkle with 1 cup shredded cheese.
  • Repeat layers 1/3 Doritos, remaining ground beef and 1 cup shredded cheese.
  • Top with final 1/3 of Doritos and remaining cup of cheese. Lay a loose piece of foil on top.
  • Place casserole into the oven. Bake for 25 minutes, then remove the foil. Continue baking for another 10-15 minutes or until the cheese has melted and the top is golden brown.
  • Serve immediately garnished with diced tomatoes, green onions, sour cream or any of your favorite taco toppings.
