Cowboy Caviar
This bright and flavorful Cowboy Caviar, also known as Texas Caviar or Redneck Caviar, is a fresh, colorful dip that’s perfect for parties, potlucks, and game day tailgates. Made with beans, corn, peppers, and a zesty dressing, it’s delicious served with your favorite tortilla chips, or used as a vibrant side dish or topping for tacos, salads, and more. No matter how you serve it, this crowd-pleasing recipe adds bold flavor to any meal.

Easy Cowboy Caviar Recipe
I’m a vegetable fan of all kinds. I suppose that’s why a simple and fresh side like this cowboy caviar is so appealing. While we all love our Southern caviar (pimento cheese) for snacking and light meals, fresh veggie dips like this recipe are super popular when entertaining, tailgating, potlucks and summer gatherings.
You can use cowboy caviar to top casseroles like my Southwest Casserole with Sweet Corn Crust or Cornbread Crusted Taco Pie. It goes equally well with taco salads and tacos, too. I’ve also been know to create a sort of Southwestern-style fried rice using this as a main ingredient in the mix. I think, it’s super fun to make fusion dishes and incorporate flavors from different cuisines into one fabulous dish. Flexible recipes are a frugal cook’s best friend and this dish fits that mold.

- Canned Beans – Black beans and black eyed peas for add fiber and bulk.
- Corn – Corn adds hint of sweetness.
- Fresh Tomatoes – Diced Roma tomatoes add color and flavor.
- Peppers – Poblano pepper or jalapeno pepper plus red bell pepper for spice and crunch.
- Onion – Red onion for a spicy earthy flavor.
- Herb – Fresh cilantro gives it a salsa-like taste.
- Avocado – Freshly diced avocados add a creamy element that’s so appealing.
- Lime Dressing – Lime juice, salt, sugar or honey, cumin, chili powder, granulated garlic or fresh minced garlic, onion powder, hot sauce and vegetable.

How to Make the Best Cowboy Caviar Recipe
- Prep the Fresh Vegetables – Thoroughly clean and prep the veggies.
- Combine Vegetables – Stir together, tomatoes, black beans, black eye peas, corn, poblano, red pepper, onion and cilantro. (Reserve avocado to add before serving.)
- Make the Lime Dressing – Whisk together lime juice, salt, sugar, cumin, chili powder, garlic and onion powder and hot sauce. Slowly drizzle in the oil. Pour dressing over the rest of the ingredients. Mix well.
- Refrigerate – Chill in an airtight container in the refrigerator for at least 4 hours.
- Serve – Add Avocado and serve with your favorite tortilla chips, a side dish or as a topping for salads and tacos.

- A large bowl and a medium bowl.
- Whisk for combining the dressing ingredients.
- Sharp knife and chopping board.
- Measuring cups and spoons.
- Avocado peeler and large spoon for stirring everything together.

Recipe Variations, Tips and Substitutions
- Add the Fresh Avocado Last – It’s important to wait until just before serving to add the diced avocado. This is so that it will maintain its bright green color and not oxidize and turn brown before serving.
- Corn – If you’d like to use fresh corn, it can be grilled, steamed or fried prior to adding to the rest of the ingredients.
- Beans – You can use a different variety of beans in place of black eyed peas, if you prefer. Pinto Beans, light red kidney beans or red beans would work in the same amount.
- Dressing – For a shortcut, you could toss the fresh ingredients with Italian dressing or a bottle of cilantro vinaigrette.
- Adjust the Salt to Taste – Salt is a seasoning that is completely subjective. It’s important to taste and add more or less, to personalize the amount to your taste.
- Lime Juice – Lime juice is my first choice for the dressing but you could use lemon juice, white vinegar, apple cider vinegar or red wine vinegar, in a pinch.
- Oil – I don’t recommend using olive oil for the dressing in this recipe.
- Peppers – You can use green bell pepper in place of poblano and jalapeño pepper along with the red bell pepper for a milder flavor.
Storage and Leftovers
- Make-Ahead Tip – This Cowboy Caviar is ideal entertaining as you can make it up to 2 days in advance, minus the avocado and store it in the fridge. Toss in the avocado just before serving.
- Leftovers – Store Cowboy Caviar chilled in an airtight container in the refrigerator for up to 3 days.
- Freezer – I don’t recommend freezing Cowboy Caviar. The fresh vegetables and lime dressing would break down when thawed.

Ingredients
- 1 14 oz can black beans drained and rinsed
- 1 14 oz can black eyed peas drained and rinsed
- 1 14 oz can whole kernel sweet corn drained
- 4 medium Roma tomatoes diced
- 1 medium poblano pepper seeded and diced
- 1 medium red bell pepper seeded and diced
- 1 medium red onion diced
- 1/3 cup roughly chopped cilantro optional
- 2 medium avocados peeled and cubed
- Lime Dressing:
- 1/4 cup fresh lime juice
- 1 tsp salt
- 1 tsp sugar or honey
- 1 tsp ground cumin
- 1 tsp dark chili powder or paprika
- 1 tsp granulated garlic or 2 cloves garlic minced
- 1 tsp onion powder
- few dashes hot sauce i.e. Cholula or Valentina optional
- 1/4 cup vegetable or canola oil
Instructions
- Prepare the Vegetables: Thoroughly clean and prep the vegetables.
- In a large mixing bowl, toss together, tomatoes, black beans, black eye peas, corn, poblano, red pepper, onion and cilantro. (Reserve avocado to add before serving.)
- Dressing: In a small mixing bowl whisk together lime juice, salt, sugar, cumin, chili powder, garlic and onion powder and hot sauce. Slowly drizzle in the oil whisking constantly until slightly thickened.
- Pour dressing over the rest of the ingredients. Stir well. Chill in an airtight container for 4 hours.
- Mix diced avocado into the cowboy caviar just before serving as an appetizer with your favorite tortilla chips, a side dish or as a topping for salads and tacos.
