You don’t need any fancy cabbage to make this cabbage casserole, a head of inexpensive green cabbage will do. Serve it for weeknight dinners, Thanksgiving, fall gatherings or with a simple bowl of pinto beans and cornbread for a filling meal the whole family will love. - Liquid: Half and half or whole milk makes the sauce smooth and creamy.

- Keto Option: Replace the soup with a combination of mayo and heavy cream and leave off the crackers for a low carb cabbage casserole.
- Add Mayo: You could also replace 1/4 cup half and half with 1/4 cup mayonnaise.
- Cheese: You can use any variety of cheese that you like. Colby jack cheese, pepper jack cheese for extra spice, gouda cheese or mozzarella cheese.

- Leftovers: You can store baked cabbage casserole in covered with aluminum foil or in an airtight container the refrigerator for up to 3 days.

- Freezer: You can freeze old-fashioned cabbage casserole. Thaw the casserole in the fridge. Please note, when freezing you’ll need to reheat and crisp the Ritz cracker topping in the oven at 350°F until heated through.

- 2-3 Tbsp olive oil
- 1 medium head green cabbage (about 3-4 lbs) cored and chopped
- 1 medium onion diced
- 4 cloves garlic minced
- 1 10 3/4 oz can cream of celery soup
- 1 cup half and half or whole milk
- 1/2 cup butter melted
- 1 1/2 tsp garlic salt adjust to taste
- 1 tsp lemon pepper or black pepper
- 1/4 tsp dried thyme or Italian seasoning
- 3 cups shredded colby jack cheese or sharp cheddar cheese divided use
- 1/4 cup grated Parmesan cheese
- Topping:
- 1 1/2 cup crushed Ritz crackers
- 2 Tbsp butter melted
- fresh parsley for garnishing optional
Instructions
- Preheat oven to 350°F. Spray a 13×9-inch casserole dish with nonstick cooking spray.
- In a large skillet, heat olive oil over medium-high heat. Add cabbage and onion, lower heat to medium. Cook for 15 minutes partially covered with a lid just until fork tender, stirring occasionally. Uncover, add minced garlic cooking for 1-2 minutes or until fragrant. Remove from heat add to a large mixing bowl.
- Meanwhile, in a separate mixing bowl whisk together soup, half and half and melted butter. Add salt, pepper and thyme. Stir to combine.
- To the cabbage add 2 cups shredded cheese, Parmesan cheese and soup mixture. Mix well, then pour cabbage mixture into prepared baking dish. Top with reserved 1 cup shredded cheese.
- Toss Ritz cracker crumbs with 2 Tbsp butter in a small bowl. Sprinkle on top.
- Bake for 40-45 minutes or until bubbly and cabbage is tender when pierced with a knife.
- Let stand on counter for 5 minutes, then serve.

Im wrong I did modify one ingredient…I used 2% milk instead of half/half or whole milk….that should have made it less rich but it didnt!
I prepared this dish this evening. I just finished a bowl. It turned out amazing. I followed the directions to a tee. I am unsure why the one lady who made it for her family stayed her dish turned out a little runny or too buttery. Mine did not turn out runny or watery. This was very very good mixed with purple hull peas and ham. Next time I would cut down just a little on the butter as the casserole just seemed to have a little extra buttery liquid in it – although no complaints about the taste!

I tried this recipe with only one exception I used heavy cream instead of having half because it’s what I had it was one of the best cabbage recipes I’ve ever tasted I will be making this instead of green bean casserole this year at Thanksgiving .Five stars.
