Busy days call for easy flavor packed meals. When they can be partly prepared in advance, it’s even better! This hearty, down-home dish is packed with seasoned ground beef, melty cheese, veggies, and a creamy, savory base, all crowned with crispy golden tater tots. It’s comfort food with a spicy twist, dishing out satisfying flavors is my favorite thing to do, and my family is always ready for it! I love this kind of casserole that I can count on to satisfy even the hungriest appetites, and it reheats beautifully for the days we’re all on different schedules.   • Beef – Lean ground beef forms the base of the casserole.
  • Tater Tots – One 32 ounce bag of frozen tater tots for a crispy potato topping.
  • Onion and Jalapeños – Onion and diced jalapeno add a kick to the flavor. If you like it super spicy, leave the seeds in.
  • Garlic – Fresh garlic cloves give depth of flavor.
  • Corn – One can of sweet corn kernels balance the flavor of the spices.
  • Beans – Pinto beans add bulk and turn this casserole into a one dish meal.
  • Tomatoes – One can of Rotel tomatoes with green chiles, amp up the flavor and thin the sauce. 
  • Soup – One can of cheddar cheese soup or spicy nacho cheese soup.

How to Make the BEST Cowboy Casserole Recipe

  • Heat Olive Oil in a Large Skillet – Cook ground beef, onion and jalapeno pepper over medium-high heat until no pink remains. Add the minced garlic and cook for a minute or two longer. Drain excess fat from the pan.
  • Add Canned Vegetables – Add diced corn, pinto beans, tomatoes and cheese soup.
  • Add Seasonings – Add chili powder, seasoned salt, cumin and lemon pepper. Stir to combine.
  • Heat Oven and Prepare Baking Dish – Spray a 3 or 4 quart baking dish with nonstick cooking spray.
  • Assemble the Casserole – Pour 1/2 of the ground beef mixture into the prepared dish, sprinkle the top with pepper jack cheese. Repeat ending with reserved cheese.
  • Tater Tots – Arrange the tater tots on top.
  • Oven – Baker per the cook time in the recipe or until the tater tots are golden brown and the casserole is bubbling around the edge.
  • Serve – Let stand a few minutes, then serve garnished with cilantro.

Recipe Variations and Substitutions

  • Protein Substitutions – You can use ground turkey, ground pork or ground chicken in this casserole recipe.
  • Tater Tots – You can use classic tater tots or crispy crowns, the round tots for this recipe.
  • Soup – If you prefer, you can use cream of chicken soup, cream of mushroom soup or cream of onion soup in place of cheddar cheese soup. Plain cheddar cheese soup will lend a milder cheesy flavor to the casserole overall.

Storage and Leftovers

  • Make-Ahead Tip – You can make the filling for this casserole one day in advance and pop it into the fridge. Follow the recipe for assembling cowboy casserole and bake it just before serving.
  • Leftovers – You can store leftover cowboy casserole in an airtight container or covered with aluminum foil chilled in the refrigerator. It will keep for up to 3-4 days.
  • Reheating – Reheat in single servings in the microwave or in a preheated 350°F oven just until heated through and the tater tots are crispy.
  • Freezer – You can freeze leftovers for up to 3 months. Thaw in the fridge and reheat just before serving.

Ingredients

  • olive oil
  • 1 1/2 lbs lean ground beef
  • 1 medium onion diced
  • 1 medium jalapeno pepper seeded and diced
  • 3-4 medium cloves garlic minced
  • 1 14 oz can corn kernels drained
  • 1 14 oz can pinto beans drained
  • 1 10 oz can diced tomatoes and green chiles (Rotel)
  • 1 10 oz can cheddar cheese soup or spicy nacho cheese soup
  • 2 Tbsp dark chili powder
  • 1 1/2 tsp seasoned salt
  • 1 1/2 tsp ground cumin
  • 1 tsp lemon pepper
  • 3 cups pepper jack cheese or colby jack cheese divided use
  • 1 32 oz bag tater tots
  • chopped fresh cilantro for garnishing

Instructions

  • Drizzle a large skillet with olive oil. Cook ground beef, onion and jalapeno pepper over medium-high heat until no pink remains. Add garlic, cook for 1-2 minutes longer. Drain excess grease from the pan.
  • To the skillet add corn, pinto beans, tomatoes. canned soup, chili powder, seasoned salt, cumin and lemon pepper. Stir to combine.
  • Preheat oven to 350°F. Spray a 13×9-inch baking dish with nonstick cooking spray.
  • Pour 1/2 of the ground beef mixture into the prepared dish. top with 1 cup of pepper jack cheese. Pour the remaining ground beef mixture over the cheese and then top with the reserved 1 1/2 cups of shredded cheese.
  • Arrange the tater tots on top. Transfer to the oven and bake for 40-50 minutes or until the tater tots are golden brown and the casserole is bubbling around the edge.
  • Let stand a few minutes, then serve garnished with cilantro.
