Taco Sliders

Whether you’re hosting a homestyle fiesta or entertaining friends on game day, these easy cheesy Taco Sliders will be the star of the gathering. To prepare, slider rolls are stuffed with taco seasoned ground beef, then sandwiched together with two heavenly layers of cheese. After being brushed with butter, they’re baked until the rolls are golden brown and the cheese has melted; turning them into a gooey extravaganza.

Easy Taco Sliders Recipe

My family loves cheese in any and all flavors. If a dish is filled with cheese, sprinkled or stuffed with cheese, it’s a given, they’ll devour it. They also love tacos so, after browsing the sliced cheese in the dairy aisle at my local grocery store, I was delighted to find this amazing new Sargento Southwestern cheese product. Cheese forms the edible “glue” to keep these South-of-the-border inspired,  taco sliders intact. That said, you can use any flavor of cheese that you enjoy.

  • Meat – One pound lean ground beef or ground sirloin forms the base of the taco meat.
  • Slider Buns – One package of 12-count potato slider rolls, sliced.
  • Oil – You can use olive oil or vegetable oil for frying the meat.
  • Onion – One sweet onion, white onion or yellow onion will add flavor to beef.
  • Peppers – One poblano pepper and red bell pepper adds spice and enhances the flavor of the filling.
  • Seasonings – One package of taco seasoning, garlic salt and lemon pepper.
  • Taco Sauce – This forms the sauce of the taco filling, Use mild, medium or hot taco sauce.
  • Cheese – 12 slices pepper jack cheese OR colby jack cheese slices.
  • Butter – Melted salted butter or unsalted butter to brush the rolls before baking.
  • Parmesan Cheese – Forms a golden crust on the tops of the rolls.
  • Assorted Toppings – Shredded lettuce, salsa, sour cream, olives for serving

How to Make the BEST Taco Sliders Recipe

  • Heat Oven and Prepare Pan – Heat oven to 350°F. Line a baking sheet with parchment paper. Set aside.
  • Sauté Vegetables – In a large skillet heat a few drizzles of olive oil. Cook diced onion and peppers over medium-high heat season with garlic salt. 
  • Cook Taco Meat – Add ground beef to skillet. Continue to cook until no pink remains. Drain excess fat from the pan. 
  • Taco Sauce – Add taco seasoning mix, lemon pepper and taco sauce. Lower the heat and simmer for 10 minutes. 
  • Melt Butter – Meanwhile, mix melted butter with garlic salt. Set aside.
  • Slider Rolls – Separate rolls removing the top of the rolls from the bottom half. Center bottom half on baking sheet. Cover with 8 slices of cheese, cutting pieces to fit.
  • Assemble the Filling – Spread the taco meat mixture evenly over the cheese slices. Arrange remaining cheese slices over filling. 
  • Butter – Brush cheese with melted butter. Cover with the tops of the buns. Brush tops and sides of rolls with remaining butter. Sprinkle with grated Parmesan, if desired.
  • Oven – Cover loosely with foil. Bake per the cook time in the recipe until the cheese has melted and tops are golden brown. 
  • Serve – Serve warm with your favorite toppings.

Recipe Variations, Tips and Substitutions

  • Protein – You could use ground turkey, ground chicken or ground pork in place of ground beef.
  • Cheese – You can use any flavor of sliced cheese for these taco sliders. Colby jack, pepper jack cheese slices, cheddar cheese or any of your favorite flavors of cheese. The cheese provides two layers of ooey gooey melted cheese that forms the glue to hold everything together.
  • Adjust the Spice in the Taco Sauce – You can use mild, medium or hot taco sauce according to your personal taste.
  • Cheese Slices – You may need as few as 12 slices of cheese or as many as 16 slices of cheese, depending on the size of the slider rolls you use. It’s fine to break the cheese to make sure every spot is covered.
  • Fresh Herbs – If you like fresh cilantro add 1-2 tablespoons to the taco meat at the end of cooking and stir to evenly distribute.
  • Serving Suggestions – I like serving these cheesy sliders with assorted toppings so everyone can dress their Taco Sliders to their personal taste. You can include pico de gallo, pickled jalapeños, guacamole, sour cream or lettuce or any of your favorite taco fixings.
  • Side Dishes to Serve with Taco Sliders – Serve these with chips and dip, with a side of black beans, pinto beans or refried beans, your favorite salsa, warm queso and tortilla chips. 

Storage and Leftovers

  • Make-Ahead Tip – For a timesaver, the taco beef filling can be made one day in advance, then placed into an airtight container and chilled in the refrigerator. You could even freeze it if you’re planning an upcoming event for up to 3 months advance.
  • Leftovers – Store Taco Sliders in an airtight container or wrapped in aluminum foil chilled in the refrigerator for up to 3 days.
  • Reheating – Reheat in a 350°F oven, air fryer or in the microwave in single serving portions.
  • Freezer – You can freeze Taco Sliders for up to 2 months. Thaw in the fridge and reheat just before serving.

Ingredients

  • olive oil
  • 1 medium onion finely diced
  • 1 small poblano pepper seeded and diced

  • 1 1.25 oz package taco seasoning
  • 1 tsp lemon pepper
  • 1 12 oz mild taco sauce
  • 1 15 oz package potato slider rolls (12 count) sliced through middle
  • 16 slices pepper jack OR colby jack cheese
  • 2 Tbsp butter melted
  • 1/4 tsp garlic salt
  • 1 Tbsp grated Parmesan cheese optional
  • Assorted toppings: shredded lettuce, salsa, sour cream, olives for serving

Instructions

  • Preheat the oven to 350°Fahrenheit. Line a baking sheet with parchment paper. Set aside.
  • In a large skillet heat a few drizzles of olive oil. Cook diced onion and peppers over medium-high heat for 2 minutes. Season with garlic salt. 
  • Add ground beef to skillet. Continue to cook for 8-10 minutes or until no pink remains. Drain any excess fat from the pan. 
  • Add taco seasoning, lemon pepper and taco sauce. Lower the heat and simmer for 5-10 minutes. (This can be done up to one day in advance.)
  • Meanwhile, mix melted butter with 1/4 tsp of garlic salt. Set aside.
  • Separate rolls removing the top from the bottom half. Center bottom half on baking sheet. Cover with 8 slices of cheese, cutting pieces to fit.
  • Spread the taco filling evenly over the cheese. Arrange remaining cheese slices over filling. 
  • Brush cheese with melted butter. Cover with top half of rolls. Brush tops and sides of rolls with remaining butter. Sprinkle with grated Parmesan, if desired.
  • Cover loosely with foil. Bake for 25 minutes then uncover and continue to bake another 5 minutes until the cheese has melted and tops are golden. 
  • Serve warm with assorted toppings, if desired.

    I love this recipe. My grandsons only like meat and cheese so I use this recipe for them. They also love it. They do not know about the extras that I add from your recipe. Thanks for a great meal idea.
