Ingredients

  • 2 9 oz prepared graham cracker crusts
  • 1 3.4 oz box instant banana pudding
  • 1 3.4 oz box instant vanilla pudding
  • 4 cups half and half
  • 1 8 oz block Neufchatel cheese, softened
  • 1 tsp pure vanilla extract
  • 4 medium bananas sliced,
  • 1 Tbsp lemon juice
  • 40 whole vanilla wafers divided
  • 4 Tbsp crushed vanilla wafers
  • 12 oz frozen whipped topping, thawed OR 3 cups fresh whipped cream

Instructions

  • In a large mixing bowl, using a stand mixer or hand mixer, whip together both packages pudding mix with half and half until thickened, but still pourable.
  • To the pudding mixture add the softened Neufchatel cheese and 1 tsp vanilla extract. Whip on medium-high speed until completely smooth.
  • In a separate medium bowl, toss the banana slices with lemon juice. Fold bananas into the pudding mixture with 1/3 of the whipped topping. Do this by hand until fully combined.
  • Divide evenly then spoon pudding mixture into the bottom of the pie crust. Use an offset spatula to spread evenly.
  • Line the edge of each pie with whole vanilla wafers using about 20 per pie. Add more if desired.
  • Frost top of the pie with the remaining whipped topping and sprinkle each pie with 2 Tbsp crushed vanilla wafers.
  • Chill covered with plastic wrap or foil, for at least 4 hours to set before slicing and serving. Store leftovers chilled.

  1. This was delicious except it was on the runny side when I sliced it. Could it be because I accidentally bought fat free half and half? The combo of the fat free cream cheese with the fat free half and half?

    1. I’ve used fat free half and half many times but, not for this pie. It’s possible, that those two changes effected the texture but, I’m wondering if the pudding maybe needed a bit more time to whip? Maybe try setting it into the freezer for an hour or so to see if that helps it set-up.

  2. I thought it was mixed together just fine. I could have put too much lemon juice on the bananas, would that have caused the pie to be runny? I used real whipped cream.

    1. Sue, It could I suppose. that said, this filling should not be runny it should set quite easily as that’s what the cream cheese does. Real whipped cream while delicious isn’t as stable as whipped topping.

  3. If the pie didn’t set you didn’t whip it long enough that’s it. Next time please whip until the filling is fully combined, this filling should set-up like a dream and consistently does so for me.

    Hello Melissa, I have to say this recipe is the best! I was asked by my room mate to help him make a couple desserts he has signed up to bring to his work for a Christmas party dessert compitition. He wanted to take a banana cream pie I made him previously but finding it was a contest I wanted to step it up a notch. I chose this recipe and it won FIRST PLACE :).     I made this pie with reduced fat graham cracker crust, sugar free pudding, non-fat milk instead of half & half, and lite Cool Whip. It tasted great but was a bit runny. I modified and used 3 cups of milk instead of 4 and it was perfect. I teach a culinary club at my school and my little chefs will be making this tomorrow. I am so excited to have them make lower-fat versions of delicious desserts.

  7. When serving a slice of this pie does it hold it’s shape on the plate or does it get very runny / messy? How long do you chill it? Thanks it looks delish!!

    1. I did indeed mean 9-ounce prepared graham cracker crusts. These are slightly larger than the standard 6-ounce crust. If you can’t find it, use the 6-ounce but, the pies will have a lot of filling.

  8. Hi I have a question thought maybe u could help, I am 32 and am just beginning to understand all the precious things I took for granted. The big one is my my grandmother’s cooking, she is still alive but she is 93 and has deminsia so unfortunately I waited to long to ask her about things she cooked, I am wanting to make what she always called goulash. I have looked and found some online but hers never had noodles in, i remember hamburger meat, corn,tomatoes, and that’s all I can remember but I know it didn’t have noodles, do u know anything like this?

    1. Hi Tisha, I have goulash here on my website but, it also has noodles which I believe is an American addition. Hers sounds like a traditional Hungarian goulash which typically uses beef but not ground. Perhaps this was her own adaptation of that.

    1. Neufchatel is often sold as the lower fat cream cheese. I love the texture, it’s soft and creamy. You can use regular cream cheese if you like.
