Ingredients to Make Cinnamon Sugar Almonds Recipe
These nuts are popular at Malls, Christmas markets, street fairs and Buc-ee’s! You know the ones, as soon as you approach the area where they’re sold, the smell of cinnamon fills the air and it’s completely intoxicating. You may even find yourself so tempted by the aroma that you think it’s prudent to spend your tight shopping budget on an entire case of them. OK, maybe that’s just me, but they are incredibly enticing. The truth is, they’re a cinch to make at home and take so few ingredients to prepare that I began making them myself at a fraction of the buy-at-the-mall or specialty store price. - Nuts – Whole blanched almonds. The package may also say “steam pasteurized”. I use Kirkland brand from Costco.
- Coating – Whipped large egg white. No egg yolk is needed. This allows the cinnamon sugar to stick to the almonds.
- Sugar – Both granulated sugar and light brown sugar for sweetness.
- Spice – Ground cinnamon for a hint of spice.
- Flavorings – Vanilla extract gives creamy floral notes.

How to Make the Best Roasted Cinnamon Sugar Almonds Recipe
- Heat the Oven and Prepare the Pan – Preheat the oven to 250°F. Butter the bottom and sides of a 15x10x1.5-inch jelly roll pan.
- Whip the Egg White – Use an electric mixer to beat together the egg white and vanilla extract until the egg white has expanded and looks creamy and light beige in color. This will take 2-3 minutes.
- Add the Almonds to the Mixing Bowl – Coat the almonds with the beaten egg white stirring until evenly coated.
- Make the Cinnamon-Sugar – Place the granulated sugar, brown sugar, cinnamon and salt in a large plastic storage bag. Seal the bag and shake to combine.
- Add the Almonds – Add the almonds the cinnamon sugar and shake until the almonds are coated on all sides.
- Bake – Spread in a single layer on the prepared jelly roll pan then bake per the recipe stopping to stir periodically.
- Cool – Spread on wax paper and cool, then enjoy.
Kitchen Equipment to Make Cinnamon Sugar Almonds
- A stand mixer or a hand mixer to whip the egg white.
- Medium bowl for whipping the egg white.
- Measuring cups and spoons.
- A jelly roll pan or a large rimmed baking pan to bake the almonds.
- One large gallon size Ziploc bag.
- Wooden spoon, stainless steel spoon or rubber spatula for stirring the almonds every 15 minutes.

- Egg White: The egg white is what makes the cinnamon sugar stick to the almonds. When whipping the egg white patience is key. It takes a few minutes for it to expand and firm up. You don’t have to worry about over beating in this instance as you would when making a cake or cookie batter. It does need to be done with a mixer, a whisk just doesn’t get the job done.

Storage and Leftovers
- Leftovers: Store leftover Cinnamon Sugar Almonds in an airtight container at room temperature for up to 1 month.
- Freezer: You can freeze these almonds for up to 2 months. Spread in a single layer on a sheet pan and thaw in a single layer.
- Reheating: It’s not necessary to reheat but after freezing, you can crisp the sugar again by placing them into a preheated 250°F oven for 15 minutes.

Ingredients
- 1/2 Tbsp softened butter
- 4 cups whole blanched almonds
- 1 large egg white
- 1 Tbsp pure vanilla extract
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 tsp ground cinnamon
- 1/4 tsp salt
Instructions

- Pourthe almonds onto the prepared pan and spread in a single layer. 1 hour stirring every 15 minutes.
- Bake for 1 hour stopping to stir every 15 minutes. Spread on wax paper and cool completely.
- Store tightly covered at room temperature for up to 1 month.

Hi Nicole, I’ve had some people tell me they’ve used brown sugar substitute with success. It’s not sugar free but, lower sugar. I haven’t tested it myself using a sugar free option. If you do, please come back and let us know.
Can you use aquafaba instead of egg white?
Yes, you can. Make sure you use an electric mixer it takes longer to expand than egg whites.
Do you prefer raw unsalted almonds or what about using roasted salted ones ?? What is the best ? Thanks
