It’s surprisingly simple to do, This particular boneless chicken recipe is a fabulous way to use pantry ingredients that you already have on hand to make a flavorful rub. A homemade seasoning rub adds flavor and a little sass to plain chicken breasts.
- Heat Oven and Prepare Pan – Preheat oven to 425°F. Spray an oven safe grill pan liberally with cooking spray.
- Prep the Chicken – Pound the thickest portion of each chicken breasts into even thickness.
- Combine Seasonings – Whisk together brown sugar, chili, salt, lemon pepper, garlic, paprika, thyme, onion powder and cayenne.
- Oil – Drizzle chicken pieces on both sides with oil. Sprinkle both sides evenly with seasoning rubbing into the chicken pieces. Place on prepared pan.

I actually brined my chicken breasts for a few hours and then reduced the salt by half. Still a little salty (will probably just eliminate the salt entirely the next time I make this) but chicken was really tender.
Recipe makes for a very interesting and enjoyable flavor profile; I was a bit thrown off by the inclusion of lemon pepper but it blends very well with everything else! I added a dash of white pepper and onion powder as well.
I think the brown sugar and the chili powder compete for “attention” though – very aggressive on the palate, so I might experiment with reducing one or the other the next time I make this as I plan to keep this as a staple weekday recipe.
